My neighbor complained my cat was pooping on his roof! My husband went up on his roof, retrieved some of the poo , and cut it in half in front of the neighbor. Low and behold it contained berries! So no cat scat, it was RACOON POO! Kitty was vindicated!

For your eggplant, after roasting, add a light bread crumb coating and pan fry for a few minutes before putting them in the casserole dish. Frying makes them crispy in the casserole for a different texture. I love it!

Al, just a tip to help keep your greenhouse warmer in winter.... You can place black painted 1 gallon water jugs throughout the greenhouse. The water will absorb the warmth from the sun's rays and slowly release it at night.

You say the ducks added some noise to the homestead, have you ever thought of getting a goose or two, ( no males ) as guard geese and as pets for "homestead background music". I know they are messy and loud if you have a flock, but one or two I think would be fun, especially if you get them very young and they imprint on you and you are their humans! I know The Bronx Zoo has a goose that interacts with the staff and greets the visitors, and follows a staff member as she does her chores! Look it up. I forgot his name. Eggplant looks delicious, rollatini is also good ! Happy fall gardening and God Bless. (I think the ducks moved on to the next phase of their life, whatever that is!)

Wow don’t think I would like soaringtractors homestead to rigid. Homestead can have pets just like everyone else. And a goose is a guard animal.

@soaringtractor Many farmers use a goose as a guard animal for their chicken flock. They also lay eggs. Sometimes a golden one. LOL

I like to cut the eggplant into coins, dip them in flour, milk/egg, seasoned panko and bake them in the oven for about 50 minutes.

Chicken and noodles with the old hens. Oh yum! My great uncle would use the eggs we found in the old hens for noodles. So good!

Instead of of game cams you should install some security cameras with some motion sensor lights to let you know whats coming on your property. Maybe figaro needs another cat partner to help patrol the property.

@Derek aKa PaPa-D , I trapped a raccoon earlier this summer. I moved it to the state park four miles down the road on the other side of the lake. I'm not above killing wildlife if I have to but I don't want to have less wildlife either. So , I re-home them if I'm able to .

We lightly flour with rice flour and potato starch then fry the eggplant most often. But we also like it roasted, we put it in our spaghetti sauce, we dehydrate then and use them as thinkener. Its a very versatile fruit. And since it has a buttery taste its works better in some soups as a thickener, rather than squash, for a gluten free option.

Your videos are so entertaining. It's well worth our time to help you out when requested. Time to solve the missing fowl mystery. Maybe some geese as a replacement. We get attached to the animals and miss them also. Their antics bring smiles. I've replaced my regular tv with YT. Funnier than regular tv by far and it's an honest humor. The animal's inborn traits offer an innocence I need more than the world can give me now. For me it's easy to be cynical if I don't watch a higher quality of entertainment. So what I'm saying is some humans have forgotten how we're suppose to behave. Thanks so much for your kindness and gentleness without getting wimpy. We love you. Blessings

I feel terrible about maverick and goose! I loved hearing them everyday as they escorted you to feed the chickens! If they are truly gone, they will be missed! You should do something in their honor...hang something ducky on the farm...in honor of them!

AL, consider putting a loft/attic in your NEW buildings and extend your storage space.YOU can put fold-down staircases. like we put inside our house, as well as an outside staircase and a door at the end of the building. I listen to your videos as music.

At home we cut them in slices not too thick, sprinkle lightly with flour, then coat with egg garlic parsley salt pepper mixture and breaded. Put them in the oven, at mid time flip them and top with mozzarella and a slice of tomato. Delicious!

I couldn't tell from the picture, but judging by the tail, fox would be my guess. My eggplant casserole is slightly different but it's my favorite way to use it. I wonder if one could make eggplant boats similar to zucchini boats? God Bless

Watching you turn the compost piles reminded of something a friend built. He built a row 8 bins connected together, each had 3 sides with the front open for his compost |___|___|___|___|___| . The back wall made it easy when going in with his front loader to turn the pile. That would be a good project. I'm not getting the notices either from about 15 different channels.

I think it's sad Maverick and Goose haven't been seen. It's important to recongise that Al is one man and can only do so much. He have everything set up to protect them and feed them. Yes he could confined them somewhere but then they couldn't be ducks, so what's the point? Farm life is raw and a bit crazy. Although there is immense freedom, gratitude, and fun involved there is also realities of life like death that you come very familiar with living on a farm. Sometimes things are what they are and you can only do as much as you can. The good thing is those two ducks had a far greater life on Lumnah Acres compared to anywhere else.

Long time ago, I found a site online that describes who got animals by how they kill. I think it said foxes are very " neat" killers. Also, they bury them until they cool off. Sorry for loss of Maverick and Goose.

Those spots in your eggplant are pretty normal - nothing to worry about. They brown pretty quickly. You cut away a lot of very edible eggplant. Also I use the onion tops back in the garden to disguise the scent of my vegetable plants. It does keep some insects away as well as the deer.

Just wondering if you could sometime give a good drone shot with description of the layout of your farm? No matter how long I've been watching (+1 yr), I still have a hard time picturing where the buildings, paddocks, and greenhouse are in relation to each other, and the distances between each. Thanks!! Really enjoy all that you do!

I just want to thank you Al for playing that song at the end of some of your videos. The night hunt for worms you played a longer version and was able to finally find the song Burdens. It really spoke to my soul, was going through a little rough time. The song reminded me that we can give God our burdens and he will always see us through. I just wanted to say thank you Al for that and for sharing your work and family with us. We look forward to see your videos everytime they come out. Hopefully you get to find maverick and goose.

Hi ya'll!!! In the south we soak the egg plant in buttermilk for 2 hours. It takes the moisture out and takes out the bitter taste. When you take out the of the butter milk put on paper towels or linden and pat dry. Then we batter and fry them. Then assemble for the sauce and baking pan. Lots of pharmashion!

My Nona's recipe for eggplant parm started by peeling, then trenching the slices in flour, dipping in egg then breadcrumbs, and then deep frying. When the slices are soft, and starting to brown, take them out, drain the oil, and then layer as you did, and bake.

I worked in a restaurant in Milford NH. We would peel the eggplant (the skin gets rubbery), slice them on the slicer for an even cut, dredge them in flour, egg wash and bread crumbs. We would fry them until they turn brown, let the oil drain off and layer the eggplant with marinara and mozzarella cheese in a casserole dish. Simple and delicious.

Do you think Maverick and Goose wandered off into the woods? In a previous video you showed one of the ducks coming out of the woods. Real shame if a predator got them 😭 it’s amazing to think about how much livestock you have on the homestead and how it can feed your family!

Gina , I smother them down in avocado oil with onions ,garlic and red pepper flakes ,add a jar of good spaghetti sauce and make a meatless sauce. It’s so good. I froze bags of smothered eggplant to add to sauce this winter. You can add meat to your sauce but it doesn’t take as much because the eggplant is hearty .

Small just past green egg plants can be on the bitter side. You should soak the slices in heavily salted water to cover for 1 hour. The water will be darker after the soaking. Drain and rinse well and then continue on with your favorite recipe.

They would still come back for breakfast and dinner. They were always fed at the same time everyday! It was most likely foxes.

I'll bet the chickens in the chicken tractors went nuts today with grasshoppers and crickets. What a great life they have under your care Al. If the people who complain actually saw commercial chicken factories they would be sickened by the sight. I had a friend and she and her sister went to work for a name brand chicken plant....they both quit at the first break time. Your chickens are happy chickens. Have a Blessed day.

Good spot for compost piles ... Anything leaching goes to the trees ... Looks like fox ... I dice and flour eggplant to fry in butter like potatoes then use in stuffed bell peppers ... Sometimes steam like squash and smoosh and fry like potato pancakes ... Also slice in quarter inch thick rounds and dehydrate to flavor soups and stews ...

I love making Musaka and also Parmigiana with eggplants. Grilled as part of Italian antipasti in oil with bell peppers. Or with Zucchini, bell peppers and onions in Ratatouille. It is one of my favourite veggies.
