Ramen is very famous through the world. You can make it at home. The Philips machine will give you a 5 people serve in 15 minutes. And because all the ingredients can be found at my local supermarket it is quite easy to make whenever I feel like having ramen :-) Find the detailed recipe on our website :

Ingredients for 600g flour (for 5 to 6 people)
- 560g all purpose flour (T55)
- 30g katakuriko/potato starch amzn.to/3aF1pGO
- 10g gluten flour amzn.to/3jg3cG7
- 4g baking soda for cooking
- 4g fine salt
- 216ml water
Ingredients for 500g flour (for 4 to 5 people)
- 470g all purpose flour (T55)
- 22g katakuriko/potato starch amzn.to/3aF1pGO
- 8g gluten flour amzn.to/3jg3cG7
- 3.5g baking soda for cooking
- 3.5g fine salt
- 180ml water
Ingredients for 400g (for 3 to 4 people)
- 370g all purpose flour (T55)
- 23g katakuriko/potato starch amzn.to/3aF1pGO
- 7g gluten flour amzn.to/3jg3cG7
- 2.5g baking soda for cooking
- 2.5g fine salt
- 144ml water

How long do you boil the noodles before adding to the ramen? Or do you just add to the hot ramen without boiling? I like the noodles to be very firm and chewy. (I am so excited to be trying out this recipe, by the way ❤. Thank you for posting this video!)

Hello, I first cook about 1 min with boiling water, then remove the noodles out and wash with cold water. and again put in the boiling water to heat the noodle. but quickly to have firm and chewy🙂 I also love firm ramen not to soft...

Hi, may I seek clarification for this recipe? The ingredient is the regular baking soda.. Or baked baking soda? In the form of kansui?

I use regular food-grade baking soda here. But if you have access to kansui feel free you use it instead.

HI, may I ask why do the noodles discolor after some time? I turned sorta greyish, can I still eat it?

Hello, the noodles changed to greish color? I am not sure if you can eat... It might change the color a little bit after you boiled, but not before I think...

Hi, I've tried your recipe using another brand of noodle machine. The dough is not flakey and couldn't extrude the noodle. Do I shall I need to reduce the water? or any other solutions?

too thick, looks like spaghetti. looks bigger than #16 thickness

Well there are at least as many ramen styles as there are prefectures in Japan. Philips has 2 good disks for ramen : a capellini disk at around 1mm and a standard spaghetti one (which I use in this video) at around 1.6mm. In the end you can use the size you prefer 😊
