You might want to try a jam collander. It's super simple to use, requires no electricity and you can remove the seeds without getting rid of all the delicious pulp. :-) If you get one, make sure the pointed wood pestle is with it. It was originally sold with the pestle and you need it to to the job right.

Raw Jams & Preserves?!! Lady you're on a winner's streak! This is so COOL, Raspberries are my favorite berry, but all 3 are worth trying and raspberry jam being a bit runny,...hmm...maybe leave the seeds in and keep it chunky like ya did with the blackberry jam? Hmm, that really depends on the overall recipe. If the recipe calls for white sugar, I would probably use granulated monk fruit sweetener.

Hi, Petra, This technique for fruit jam recip is quite surpising, since I'm used to spend a lot of time stirring a pan of strawberries at the stove until it gets thick. If I really like some recipe that's traditionally sugary, I give it a try reducing it as much as possible but commited to preserve the texture, colour, flavours and so, and I've been having quite good results specially with the strawberry jam with 10:1 ratio (strawberry : coconut or brown sugar). In your recipe, I realise the chia seeds absorb the excessive water mimicking the reduction of the cooking version, but I'm afraid there is any chia after taste, because yeah I know they are much better than flax seeds when it comes to flavour, still they have sort of a divergent taste though. Something I wouldn't appreciate, even because these berries are ridiculously expensive here in Brazil and it would be an unpleasant experience if the outcome doesn't match the expectations. Thanks.

As another raw sweetener, could you use maple syrup, agave or honey? Would they work in the mixture or damage the consistency do you think?

For the blackberry one I would add raw apple puree after adding a good amount of lemon to the puree. Or add stewed apple. In both cases using v sweet apples if course since they will only be part of the composition. Then I think it should taste like blackberry and apple pie filling. I would not like to add honey since I think it would overpower the flavour of the blackberries; the same with maple syrup.

I wouldn't say "better" but the texture will be different. Ground chia seeds are less noticeable. If a recipe calls for whole chia seeds, make sure you measure whole chia seeds and then grind. (Ground chia seeds have larger volume than whole chia seeds).

Tandem Bicycle Lakanto makes a powdered monkfruit or you could buy any brand of granulated monkfruit and run it through a blender/food processor/coffee grinder to make a powder. It melts better than granulated.

What??? To me jam means "preserve" but there is no mention of anything like that in this tutorial. Are you trying to tell me that these so called jam (fresh fruit paste) will last in my pantry for a year like "jam" does? Maybe in my freezer, but than it is not a jam. Please clarify?

Saying this out of concern. You look ill friend. Deep dark circles and the volume in your face is greatly diminished. Even compared to your videos just a few years ago the light in your eyes is gone.
