Hi Brain, here is my review of the tweaks I made: subbing sun dried tomatoes for green peppers (which my tummy won't tolerate) was great. I also put the potatoes on the bottom of the pan (with parchment paper underneath) instead of mixing in. I felt that the potatoes would maybe get lost and I wanted to be able to "feel" them. So I cooked the veggies and then mixed with the eggy mix and spread over the potatoes. During the last 15 minutes of baking I drizzled some sweet & spicy BBQ sauce on top. I found it really good. The salt-less spice I have was not great, so I'm going to try to locate the one you use. Love your videos, thank you Brian and Jessica.

This casserole is delicious! I have been looking for a breakfast casserole and I am so happy I made this one! My non-WFPB hubby is not on board with my lifestyle (yet) and he even said it smelled so good and he would try it. I will definitely make this one over and over!!

I usually hate background music on videos, but I love the groovy music on this one. The volume is low enough that I can still hear Brian. The casserole looks amazing! I think I will make this for Easter brunch. 😋

❤This casserole really is just what Brian promises!! I wish I could add a photo cause mine turned out just like Brian & Jessica's. I was going to make it for the Easter Brunch idea that Jessica suggested but my non-vegan husband saw the recipe and veto'd it on the spot. So we did take-out Chinese instead (we are empty-nesters and have flexibility for some holidays now)! But I had purchased all the recipe ingredients, even the amazing black salt that smells & tastes like eggs, so I made this dish the next day instead. Well, it smelled so good while baking, that even the hubs agreed to try it after all and we both agreed--this eggy casserole is really good as a vegan egg dish even for company! You knocked it outta-the-park with this one, Brian and I always love Jessica's tips & commentary! We'll be heating up our left-overs tomorrow in the air-fryer to re-crisp! Love to you both--I love being a Krock-Pot follower and enjoy all your creativity even venturing to MN for a vrbo work week with a cool kitchen! The best!

The way Brian cooks makes sense to me. A lot of vegan sos-free recipes I try I end up modifying to vary the texture or balance the flavors but with Brian's recipes I usually don't want to change anything - which is the highest culinary compliment I can give.

@@KrocksInTheKitchen XLNT. It'd be helpful to know if this recipe freezes well. For 1 or 2 member households, a 9 by 13 casserole isn't always a workable option, tho muffins that can be frozen may really work (and for batch cooking too).

I thought the tofu made from soybeans wouldn’t be okay for Passover?

@@hidden909 Well, some eat beans, rice and corn, during Passover, and some not, it really depends on how strict you are... Historically, Ashkenazi Jews would not eat it and Sephardic Jews would. Today, when families are very mixed, it's really up to any household unless you're Orthodox... In my (mostly Ashkenazi) family, everyone eats beans and rice and it's fine.

@@lisasim My father was from a small shtetl in Eastern Europe, he survived the concentration camps WW2, and he was so strict with Passover food! He has died now and because of Covid this is our 1st Seder without him. I’m not sure what page everyone is on yet. I’d love to loosen the restrictions, as a vegan it’s extra hard to make a Passover dish!

@@hidden909 So sorry for you loss! 😓 Legumes, rice and corn are not considered leavened foods (chamtz), but somewhere in the 12th century, Ashkenazi Jews started avoiding them in case there's a mix up and you find a wheat grain among them. There's some documents showing some Sephardic Jews communities that became strict as well, in the 13th century... Many years have passed by and I hope that your family is willing to be less strict about it. It's not chametz, you're not going to bring any bread or wheat pasta... I'm quite sure it will be fine. There should be some good recipes for Passover on Chef AJ channel and on Shayda's channel, hope you can find them helpful. Happy Pesach! 🙏🌸🍷

We make hash browns just by shredding a clean potato with the skin on and they are great. Just grate it and throw them straight in the pan. Super easy. Last week we got Yukon Gold potatoes frim Costco and they made the best Hash browns I've ever had! Thomas (hubby) cooks his in oil. I made some recently with just a spritz of EVOO from my Pampered Chef sprayer because I didn’t know if I could make them at all but they came out fine, so next I will try frying them with broth.

So its basically fried veg, mixed with grated potato, held together with silken tofu add garlic etc and baked. Deffo gonna do that x

The tofu itself won't really hold the mix together. The pumpkin seeds do a great job at making the mix more solid. 🙂

Yes, the pumpkin seeds act as the binder. Similar to a flax egg in baking. You could use garbanzo flour instead but I'm not sure how much to use. The black salt is purely for that egg flavor. If you don't care about it, just season the dish with whatever seasonings you prefer. 😀

Would love recipes that don’t have MSG (nutritional yeast) in them. This recipe sound good, but will wait until you come up with another one w/o nooch in the future! You guys are looking good!

Honestly, you could leave it out. It isn't a primary ingredient and it only adds a bit of flavor and color.😀 But in the defense of nutritional yeast, they don't add MSG to it (at least most brands don't). The glutamate (also called Free Glutamate) is naturally occurring when the yeast grows just like in mushrooms, nuts/seeds , tomatoes, all soy products, and even potatoes. But, if you have an MSG intolerance, you should probably avoid this dish as it contains mushrooms, seeds, potatoes, tofu, and nutritional yeast.🙂

That's actually how this recipe started. Dollar Tree sells a frozen veggie blend called "Seasoning Blend" and that became the base. But it does taste better when the veggies are fresh. 😀

What brand of Tofu do you use? Does it have to be Soft Silken or can I use Firm? I live in a small town with limited vegan options. The closest Whole Foods is 3 hours away. I have never had tofu before, but this recipe looks so good I am finally willing to try it.

I was rather shocked to hear that they aren't common in the UK. I asked our friend Martin the Great Potato Mage and he confirmed that shredded potatoes are virtually impossible to find. Happy Easter to you as well. 😀

The sorrowful lack of frozen hash brown potatoes is all over Australia too. i SOOK and CRY and BOOHOO and WAH with self-pity and jealousy whenever i see videos including those amazing American bags of OIL-FREE GRATED SPUDS, cos i know how much work it is to peel and grate and squeeze out a whole pile of spuds. Compared to opening a bag from the freezer!

Ooooh, looks very good. I don't like green peppers so I'm thinking some sun dried tomatoes might be good instead. I'm also thinking of spreading BBQ sauce on during the last 15 minutes of baking, kind like we do with "meat"loaf. Y'all inspire me!

You could always use less of it, but definitely chop it finely. The last thing you need is large chunks of celery. 😆

I love a good tofu scramble using firm tofu but I've never tried black salt, though I've heard how great it is at giving that eggy taste.

My only advice for using it with a tofu scramble is to use a bit in the cooking but also mix in a bit right at the end or sprinkle some on top. Cooking it tends to hide the flavor a bit more. 😀

I (Brian) am not a big fan of kale when it's cooked. But this turned out great with it. But you could honestly just leave it out. Adding it wasn't was mainly for color and extra nutrition. You could also sub it for some spinach but I've never tried it. 😀
