Just bought the cook book nicely done .love the photos. I just wish there were more dinner options not soup . I love your channel. I have been vegan for years now and Dinner recipes are harder to find. Oil fee and sugar free is the way to go.🥰

I had everything for this except for the spinach, so I made it. While putting it in the oven after assembled I managed to dump a fourth of it on the oven door. Of course the door was screaming hot because I had just roasted the vegetables! The door was clean so I scooped the whole mess back in and it was delicious. 😂😂

If you notice it doesn't set up, it's a casserole not a quiche so you'll need to add some flour or something to the batter if you want to cook it in a muffin pan.

HI Jill, You have save a life. Won't go into details but was bedridden from June 24 to July 12, 2021. Firstly I will say we are handicapped with our universal health care system in Canada. Our system is broken. In desperation while lying in bed I came across your channel. Someone was watching from above. I immediately got my hubby to start me on potatoes and sweet potatoes nothing else ( I could not hold down any food, thus 30 lb. weight loss without trying) I am out of bed and still rebuilding my energy. I always liked to grow veg and fruit that grows in eastern Canada ( 40 minutes from New York state). I was able to pic 6.5 lbs of gooseberries in my yard. I have looked up your vegan pie crust, thanks now I usually mix rhubarb and gooseberries with sugar and sometimes cinnamon and a hit of nutmeg. Well I am off sugar...please recommend what I can use for the rhubarb and gooseberries . My gooseberries are no longer raging sour as I could not pick them green and they ripened and are a little sweet. Please help. Again you have saved a life. Never stop sharing your recipes and your very clean ways. Lots of love from a grateful Canadian.

@@sherrialan4478 Look up a soy free vegan quiche recipe, it'll be a flour base of some kind or a cashew sauce. Will have a lot more calories than the version with tofu though, but if it's just a taste preference the sauce wouldn't taste like tofu.

Hi Jill- Do your potatoes get nice and tender when roasted this way without oil? I know you add a bit of broth, but I find that it just evaporates and they dry out, but never get soft. Any suggestions? Maybe lower temp? More liquid?

They get a little dry from being baked the first time but then when they cook with the other ingredients during the second bake they get super soft.

Could this be considered a "wife's saver" that people do for Christmas morning breakfast? The original wife's safer gets made the night before and sits in the fridge overnight. Could you prepare this the night before and then bake it in the morning? Or would all the veggies be soggy by the morning?

I'm not sure if you can get this where you live ( I know I can't) but I've heard of tofu being made from pumpkin seeds. Its called PUMFU. Hopefully you can find it near you or there's a recipe online.
