That looks good, I won't be able to not add a little garlic powder. Only because, I really like garlic. I hope that wasn't your mistake!😂😅 I started watching you guys sometime around fall of 2019. I have a terminal lung disease and I really needed to lose weight to get on the transplant list and to be able to walk and function. I gave up processed foods, started reaching for whole foods, (that part was easy because I grew up eating that way-good home cooking), and cut out most dairy and I'm on a very low sodium diet. I have lost 75lbs. I'm so happy and kind of proud of myself. Anyway, not only are y'all entertaining to watch, you have been a support system for this change in my life. I am very grateful for that, so thank you❣️🙌💕 All my love and positive energy to you and your family. (and to the furbabies, of course 🐕🐕)

Your soup looks yummy! What I do when making vegetable soup is roast all the vegetables in the oven first...not to fully cook them just to deepen the flavor. Then add them to the stockpot with your liquids and seasonings and simmer until all veggies are tender. I wouldn't roast the peas or the canned tomatoes but I do roast fresh tomatoes, if I'm using them, along with all the other vegetables. It adds a different. richer dimension to the flavor of the soup.

I made this for dinner tonight and it was delicious. It will definitely go in my rotation. I might vary it by adding cabbage next time or corn, but it is delicious as is. I did add the optional salt. I never would have thought to add the lemon juice but it added a nice bright flavor to the broth. Thanks so much for this recipe.

Made this last night for a Sunday night family dinner and it was absolutely delicious! The only change I made was leaks instead of onion , plus added a can of drained kidney beans, and cooked in the instant pot. It was so yummy, even meat eaters were very impressed and satisfied. Thank you Brian & Jessica! for giving us a new favorite to add to our family meals recipe book.

You inspired me to get some veges out of the frig and follow your guide to create a vegetable soup, it turned out great! I used small red potatoes with the skin on and substituted corn for green beans. Thanks and keep the recipes coming!

The Mary’s mini and starch solution stuff has finally helped me tip the scales again. I was stuck but now I’ve lost another 10lbs. Still have way more to go! Not only was I pigging out on vegan junk food, I also over indulged in carbs and fats like avocados and nuts, pasta and bread. I had done gluten free for so long, it kept me thin at first but didn’t allievate other symptoms and eventually the weight got worse- especially after pregnancy. Anyways, I was just happy to eat carbs again. I definitely over did it. Choosing one starch per meal and having equal parts veggies and then another side of raw greens or fruits really has changed my life. I’m thankful for your channel bc you guys influenced me on many things! Finally got that scale moving the right direction again.

My kids wanted baked potatoes for dinner but I was out of Russets. I made Yukon golds instead. They liked them A LOT better than Russets! The middle ate 3 potatoes and my youngest ate 2!

Hey, love you guys. I’m so proud of you and your Adventure. I’ve been plant based for a few years and love your channel. My husband and I made this soup today and added in a few extra things. Actually, for us this would be called the “clean out the fridge soup”. We added in cauliflower, fennel, kale, garbanzo beans (sorry Mary M), and some beautiful giant red scallions along with your ingredients. We also cheated by using tiny potatoes which were small enough to use whole. I made my husband prep all the veggies as he’s a professional chef. He’s even faster than the chopper. When we served the soup we added some Cholula (hot sauce), because we like our food to bite us back. Because we added all those extra veggies we almost ran out of room in the pot. I must say I’ve never been a fan of vegetable soup, but this has completely changed my opinion. Thanks for the inspiration on all levels.

This a fabulous soup on its own but can be varied so easily by adding greens or zucchini or, as I often do, blending up a cupful, or more, returning it to the pot for a thicker creamy type soup. Also, when not on MM, changing from potatoes to barley. When I use barley I add sliced mushrooms too. Soups like this can take you all thru winter.

This looks like a Yummers soup! I was talking with my daughter about trying the Mary's Mini and she said that she wants to do it as well. She's 26 and had a baby 13 months ago and is feeling like she would like to get more fit. This soup is a great option for the mini. I never even thought about a soup while doing it. I've been making a near identical soup for many years. The only variations are changing up the seasonings at times, and alternating the green beans with asparagus. Plus I always add mushrooms and add the peas at the very end. Thanks for sharing!

Love the sweatshirt. Cape May is our my wife's favorite place on earth. :) Your vegetables (celery, carrots, and onion) along with tomato puree is a traditional French base called pincage. The classics never go out of style.

I make soup about once a week. I call it "Clean Out The Fridge" soup! XD So there's always a slightly different mix of vegetables, and most are leftovers from other things. I agree that a splash of acid makes a huge difference! Just plain apple cider vinegar works too!

Great easy recipe! I love you can leave it "brothie" for soup or put a couple cups in the blender, return to pot and make it more stew-like. Keep 'em coming... YUM!!

I use my food processor to breakdown the cooked vegetables sometimes to get a thick soup with no lumps! Delicious. I will be adding lemon juice to my soup next time. Have you tried adding fresh ginger to your soup - yum.

Italian seasoning is a mix of herbs like ingredients are basil, oregano, rosemary, thyme,garlic powder, sage, and coriander etc so technically its not just one seasoning. LOVE your recipe.

@@Daren_PNW We make a rub of sweet paprika fresh chopped sage fresh chopped rosemary minced garlic cayenne pepper salt and freshly ground black pepper which we use when we make roasted potatoes, And for various pasta dishes, bean dishes, tomato sauces,and polenta and holiday stuffing.

True, but ai think the point is that he didn’t need to grab, open, or measure from more than one jar. At the grocery store, it’s one item that is easily and inexpensively acquired. I got so overhelmed with the weird green soup recipe spices, terrified of wasting all those beautiful veggies with so many spices so I deeply appreciate this simple recipe. I appreciate you listing out the ingredients for the unfamiliar though.

I’ve got all the ingredients and will be making this today! Thank you for your Chanel (just found you). I have been doing a “modified Mary’s Mini by sticking with my oatmeal & fruit for breakfast and then everything else is potatoes and veggies. I did find a cheese sauce recipe that is a potato base so I have been adding that to many of my meals.

The flavors were right but the look and texture wasn't. He just explained why the soup turned out the way it did. It was the amount of potatoes and how long I cooked them. 😀

This is how I make my red lentil soup (basically sub out the potatoes for lentils). I saute the veggies in water for 10-15 minutes, add in red lentils, broth (which probably has some seasoning), and the only seasoning I add is garlic salt. Its sooo good! Thanks for the recipe, one day I will try it with taters:)

I'm my own sous-chef, but half the love of cooking is in the cutting up of the vegetables I think. I put in tons of vegetable at a time, but I'll give the Italian seasoning and lemon (or pickle juice) a try next time. Have you ever made spinach or kale cooked together with rice? I sprinkle a little lemon juice over that too in the end.🌹
