My first age legal job was at a New York style Jewish delicatessen. I started on my 16th birthday and worked there for four years while in high school. Of all the wonderful foods that I was exposed to, the chicken liver pate was one of all time favorites. Unfortunately it's hard to get good authentic pate anywhere now unless you make it and this recipe is spot on. I'll be making it soon. Thanks Joel.

Actually, it’s sugars, starches, processed food, fructose that produce fatty liver and triglycerides. Pate is nutrient dense and as long as your not consuming the above mentioned it won’t even cause fat gain. The liver makes cholesterol and if consumed, the liver will make less. Sadly there’s so much misinformation regarding nutrition, cholesterol etc.

@@NightTimeDay sure one can overeat on anything, however, the pate is very nutrient dense and satiating, so it’s unlikely one will overeat. Other than mother’s milk no natural food contain both sugar and fat….that’s a real culprit to fat gain.

I always let the liver soaked for a 10-15 minutes in milk. My mom would make pate this way. My experience is it helps to get rid of the excess blood. Just different taste.Nice recipe, as always.

@ Recipe30, Joel my good Aussie friend, here is a serving appetizer for 2, 1 pound chix livers simmered in chix stock covered 1 inch for 45 minutes, add 8 ounces of baby bella/crimini mushrooms to this to this after 20 minutes in the pan, & while simmering, 1 bulb of garlic with just top cut off & in foil, pour a little extra virgin olive oil on top & cover completely & add s and p bake at 450 F, for 45-50 minutes, then on a cutting board put on the strained livers/mushrooms, you can squeeze out the garlic cloves from the bottom on the board & use a fork to mash livers/mushrooms/roasted garlic cloves on the board into a paste, add onion powder to the paste & any spices you like, I like to eat mime spread on water crackers, etc...for more folks just add more ingredients doubled

I left out the bacon, green peppercorns and brandy, because I didn't have any on hand and left out the added salt, because I never use much salt and the salted butter is plenty salty for me. I’ve made every type of Pâté under the sun, from beef to goose. Whenever, l make Chicken Liver Pâté though, l use “Schmaltz” (rendered chicken fat) instead of Bacon. Although, l use Bacon when l’m making a Pork Pâté. The weird thing is, l don’t care for Pâté myself but, l make it for my Holiday Gift Baskets. My family and friends enjoy it.
