Absolutely gorgeous! My dad was born in Sicily & my mom was taught how to make all of the Italian foods from my grandmother. Never had seafood ravioli, but we had meat & cheese ones. My mom used a pizza cutter t cut out the individual ravioli & then crimped the four sides with a fork. I'm going to make this recipe very soon because I know it'll be awesome. I made this super recipe a few nights ago after resurrecting from storage the pasta machine my lovely wife gave me about fifteen years ago. The only thing I changed was to put fresh basil in with the filling and I used Pernod instead of white wine in the sauce. It turned out beautifully so I'll be keeping the pasta machine in the kitchen cupboard from now on instead of in the garage. Thanks, Joel.

I’ve made quite a few of your dishes so far, which have all been scrumptious. One of the best things about your uploads is the production value, visuals, ambiance and music without too much yakety yak (although when you do speak it’s great too!). I watch the clip once just to enjoy it and learn the ingredients and technique. Then I’ll typically watch it a second time to make my plan, look for substitutions if I don’t have something, make sure I have all the equipment ready. I’ll pull up the recipe and do mise en place, and then play the clip a third time while I’m cooking. While I’m eating, I scroll through your channel for my next menu item. If I don’t fall in love with an exercise channel soon I’m going to have to order bigger pants.

subscribed, and i plan on trying this recipe and your porj and beef ragu. I love how your recipes (in my humble opinion, of course) are more like what you would ACTUALLY get in italy, as opposed to whats common at an italian american restaurant. There is a huge difference.

@@UnitedCuisines Good question. Mostly a recipe will tell you to 'rest' dough so flour can hydrate, relax gluten and be easier to work with. I rest pasta dough for 20 to 30 minutes if I'm rolling and cutting it the same day. If I need to hold it a day or so I put it loosely in flat containers and pop it into the freezer. When it comes time to boil it I use very salty water (no oil), put the pasta into the pot frozen, stir with the handle of a wooden spoon and never EVER rinse the pasta. Put the al dente pasta into the pan you are finishing the sauce in and give it a toss or use your wooden spoon handle to finish cooking it. Hope this helps. 🍝
