So Easy to prepare - Dried Red Chilli Paste, forms the base of many condiments, sambals, chili sauces.. It is also a great marinade and natural food coloring. I use it in so many of my dishes. And some of your were asking me how I make mine. so here it is. I always have this in my fridge!
IMPORTANT NOTE 🌶 📝 pleasedo not use 🥵 overly spicy dried chillies or use with cautiion . While grimding its best to cover your mouth and nose, so that you dont get the burn and cough when opening the lid!

Im so sorry to hear that! I do mention that mild chillies are used or otherwise seeds may be removed. Should stress that grinding hotter dried chillies can cause irritation:(

Wow life savior. Whenever i see malay recipes online, i constantly wonder how they make the chilli paste from scratch since they dnt show all the procedures in depth.

Thanks! I have so many chilis from last year, going to dry this soon! Can I store this for a longer time? In sanitized jars, at room temp

+daemmerung19 i have always refrigerated the paste... if you are able to sterile-seal them properly they can be stored at room temperature but I am not sure how long.. but one month should be fine... once opened it must be refrigerated. 💐💐let me know if you do store them :)

I use this for so many recipes on my blog.. off the top of my head Indo chinese chilli chicken recipe here kzbin.info/www/bejne/iIPRmaSKjNWUe7c You can also use it in Sambal Chicken recipe here: kzbin.info/www/bejne/aGrTmoisbc54n9U. By replacing the rehydrated chillies with the paste.

This is basic. But when you want to cook sambal, u need to pound/blend shallots, garlic,candlenuts,turmeric,lemongrass n galangal..Add to the chilli paste n saute the blended chilli paste to cook sambal. U can add big onions n fried anchovies to it. Enjoy!

Is it better to deseed the chillies--to remove the extra heat? Also how does one remove the seeds?

only if the chillies are the shiny hotter, variety. My chillies the shrivelled ones, don't pack so much heat once cooked. To remove the chillies, snip off the tips and just shake so that the chillies fall out. you can also scrub a few of the snipped chillies in your hands to help the seeds to fall out. wear disposable kitchen gloves to prevent burning sensation later.

Vinegar prevents spoilage. Apple cider vinegar however, alters the taste. You can omit the vinegar and use quickly

Yes you can! I don't prefer it because it isn't always compatible with the dishes I cook. I like the fresh taste. Store bough taste contains vinegar and salt.

In tropical/ temperate climates, I would not keep it out at room temperature for more than 24 hours. Chilling is best.

If you increase the vinegar it will keep a bit longer ....you may want to liquidise with a few tablespoons of vinegar then it can last. Add a teaspoon of salt and keep the top covered with a tablespoon of oil

it will be a different flavour from the chilli paste usually required in Asian recipes, but yes. you can just blanch the chillies for a shorter time.

Add chillies to water in saucepan. Cover bring to boil. Then lower heat and simmer for 10 minutes. ..Please be cautious that chillies are not too spicy or cover nose and mouth before opening the blender later

i don't know how you can handle those chilies once they have plumped up with your bare hands. I would think there is capsaicin oil in the water that would burn

look for the shrivelled variety they are less spicy.. Kashmiri dried chillies are the best, but not found easily.

You are correct. The heat Lies in the membranes but they are removed when you moved the seeds.👍👍

4 weeks if refrigerated tightly. use only a dry spoon each time while using.

Boiling to rehydrate the chillies while also releasing more flavor than merely soaking ... Vinegar acts as a preservative and mellows the chilli pungency.

It keeps sell for 4 weeks.. longer if dried spoon is used each time and not exposed for too long.. keep tightly refrigerated
