Hi everyone! Today, I’m making two Turkish classics: Antalya Piyaz and Burdur Şiş Köfte. In just 20 minutes, we’ll grill juicy köfte and make a refreshing piyaz salad with tahini and beans. It’s a quick and delicious way to bring the taste of Turkey into your home.
Şiş Köfte and Piyaz
For the köfte:
300 gr single ground beef (from around ribs with fat)
100 gr single ground lamb
½ teaspoon salt
1 pinch black pepper
1 pinch thyme
For the piyaz:
4 tablespoons tahini
2 tablespoons vinegar
2 tablespoons water
1 tablespoon olive oil
1 pinch salt
2 pack (400 gr) boiled beans
1 red onion, sliced
2 tomatoes, diced
10-15 sprigs of parsley, chopped
2 hard boiled eggs (optional)
For serving:
Pita bread
Tomatoes, quartered
Pepper
Onion, cut in circles
●First heat the cast iron pan.
●Then for the piyaz, combine tahini, vinegar, water, salt, and olive oil in a bowl. If the sauce is too runny, add the thicker part of the tahini and mix well.
●Place the strained boiled beans into the sauce. Add onions, tomatoes, and parsley to the beans, mix all well.
●You can optionally add boiled eggs to the piyaz for the authentic Antalya version. If you want to keep it vegan, skip the eggs.
●To make the köfte, mix the beef and lamb together. Ensure the meat has some fat, as it will melt during cooking and give the kebab its signature flavor.
●Add salt, black pepper, and thyme to the meat mixture. Knead the mixture well.
●If you don't have metal skewers, you can use wooden chopsticks.Flatten the ends with a stationary knife, if round. Soak them in water for at least 4 hours beforehand to prevent them from burning.
●Take small portions of the meat mixture and mold them around the skewers. Wet your hands slightly to prevent the meat from sticking. Shape the köftes on a plastic wrap and press down gently to give them a uniform shape.
●Place the skewers in the pan. As the fat melts, it will release its flavor, creating a slight smoke. You can also roast tomatoes, peppers, and onions in the pan alongside the kebabs for extra flavor.
●Serve the traditional köfte and the piyaz with some pita bread and enjoy this beauty with your loved ones!

I made tahini using your recipe and have tomatoes from my garden so I'll be making the Piyaz today as a side dish for fish which I thawed and need to use up. I think the combination will be delicious. I've copied the Kofte to try in the future. I love your channel and each recipe I've made has been amazing.

You can use pork instead of lamb but you should reduce the amount of it comparing with lamb because pork meat has even more fat than lamb. Already Turkish kebabs usually prepared with pork in Balkans
@amateurepicurean8168

@@historybugs We use a blend of minced beef and pork routinely whenever mince meat is called for. But the idea of using a little bit of minced lamb is an interesting one.
@historybugs
@historybugs 2 ай бұрын
@@amateurepicurean8168 the original recipe is with lamb because muslims does not eat pork. A portion of lamb meat usually added to almost all minced beef dishes in Turkey because of extra flavor and fat it provides but pork also does the similar job. The only difference is that the pork meat is even more fatty than lamb, so you have to be more careful with it to not make it overly fat

What a wonderful new dish to learn (as a non-Turkish cook). I notice that some people are looking for dishes that can be done fast fast fast. Then there are people who love to cook and are happy to devote appropriate time to that activity. There seems to be a sizeable difference in these approaches to cooking, and I don't know how to please both types at the same time. I am one who loves to cook and finds it stressful when someone tries to rush me through the process. Yes indeed, there are times when I have to hurry too, but I wouldn't try to make a dish like this. I'd stick to something like ramen, omelets, or hot dogs.

Hi James! Thank you so much for your thoughtful comment 😊. You’re absolutely right - when people are pressed for time, cooking can sometimes become stressful, and that’s definitely a challenge. But cooking is such an enjoyable and relaxing activity that it can also be the perfect way to let go of that stress. Taking your time and enjoying the process is always the best part. I hope you get to try this recipe at your own pace and savor every moment! 💚 Elif Refika’s Kitchen Team

Dear Refika, when we were in Turkey many years ago in a three star hotel with five plus star food as a snack they gave us probably borek with spinach and some kind of hard cheese, it was delicious, I do not know how to replicate it at home. We also ate some kind of very thinly sliced salad with tomatoes and cucumbers, also delicious, served with everything, as well as tomato soup like nowhere else. Maybe you could shine some light on how to make these dishes? I would love to make them at home and I trust no one else. Greetings from Germany.
