Mantı is a thin dough pieces filled with beef, cheese or chickpeas. I am sure that this sound familiar to you because every culture has their own version. If you go to Italy, it is ravioli. If you go to Asia, it is dumpling, momo, shumai… you can travel the world by eating mantı. They can be fried, boiled, oven roasted or steamed. In our cuisine it has so many variations but the most popular one is Kayseri Mantısı famous for their small size, on top garlic yoghurt like a cloud and, the legend, butter with red pepper flakes. Today I will be making an easier and bigger version but fell free to make them smaller if you like the challenge

Difficulty: Medium-Hard
Prep time:40-50 minutes
Cooking time: 3,5 minutes
For Mantı Dough,
300 g all-purpose flour, little less than 3 cups, plus more for dusting
125ml water, ½ cup
1 egg
3 pinches salt
For Beef Filling, you can fill with whatever you like, mushroom, chickpeas, cheese or veggies
250g double-ground minced meat
1 onion, grated
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
For Garlic Yoghurt Sauce
6-8 tablespoons strained yoghurt
2 large cloves of garlic
1 pinch of salt
1 pinch of black pepper
+ Cooking water
For Butter Sauce
1 tablespoons butter
2 pinches red pepper flakes
Dry mint, for topping
Sumac, for topping
• Start by preparing the dough. Put the flour in a large bowl. Mix the flour with the salt, water, and egg using a wooden spoon. Prepare a clean surface to knead the dough. Keep kneading by hand for 8-10 minutes to get a soft dough. Depending on the flour you can add extra half cup if the dough too sticky. You can also knead with a stand mixer if you want. Then, divide the dough into 2 lumps. Cover them with a damp cloth and set them aside for a while.
• To prepare the meat filling, add the minced meat, black pepper, salt, cayenne pepper, and grated onion, and knead well until all the ingredients are combined. Set filling aside.
• Before rolling out the rested dough, lightly flour the counter and rolling pin so that the dough does not stick. Take one of the doughs, sprinkle flour on it, and start rolling it with a rolling pin. When the shape is elliptical, flip it over and rotate it 90 degrees. Continue until the dough is 50 cm in diameter and 1.5 - 2 mm thick.
• Cut the dough into small squares around 3cm, traditional mantı is smaller but this size is better to start😅 with a mantı cutter, knife, or pizza cutter. Place a bit of minced meat filling in the center of each square. Stick the opposite ends of this dough, which you put in your palm, by slightly moistening your fingers. Then fold together all four edges of the dough on top of the meat. Repeat this technique for all the dough.
• Fill a large saucepan halfway with water and when it boils, add a pinch of salt and 2 large cloves of garlic. Then slowly add the mantı. Taste the mantı pieces after about 3-3.5 minutes, if they are not doughy, it means they are cooked. After turning off the stove, add 1 glass of cold water. This will prevent mantı to overcook.
• Then take 1 glass of water from the pot and add it to the room temperature strained yogurt and whisk it well. Crush the garlic you put in the boiling water and add it to the strained yogurt. Add a pinch of salt and black pepper to taste.
• To make the butter sauce, melt the butter in a small saucepan. When butter sizzles, take the pan from the direct heat and slowly shake to form a foamy texture. Add red pepper flakes and shake again, this way pepper wont burn and give its colour to the butter.
• With the help of a skimmer, remove the mantı from the boiled water and transfer them on a serving plate. Spoon the garlic yoghurt sauce first, then the butter sauce over the mantı. Finally, add dried mint and sumac if you wish and serve. Enjoy your meal!

Dear Refika, Burak, Bahar and the rest of the team, since you are the only people in Turkey I know, I would like to express my deepest sympathy for the victims of the dreadful and disastrous earthquake in your country. I,myself ,have in the past experienced a similar situation in my country and I can fully understand the terror people there went through. I wish and pray for the thousands of people who suffers right now to find the strength from God to cope with the huge consequences of this tragedy. God have mercy and protect those who are still under the ruins! Take care! Your Greek friend .

I see a lot of people are worried about Refika and her wonderful crew and family, as am I. From what I can see, the worst of the earthquake is centered around Gaziantep and I believe they are located around the Kuzguncuk area of Istanbul which appears to be far away from the earthquake activity. Much love to everyone in Turkey and Syria affected by this catastrophe.

From what I can see, Refika and her team are unharmed. On Instagram she recently posted a request for kitchens and distributors to send canned meals to the affected zones, along with contact numbers.

Refika I believe is in Istanbul, northwest arm, just above the main country, the earthquake happened nearer the Eastern side, right by Syria. I’m sure the whole country is devastated by the events. many construction shortcuts seem to the reason so many buildings fell.

This is a new one to us! We are of Polish heritage and this is very similar to perogies. We serve them with sour cream and/or brown butter, so also similar to this particular version. However these look like they'd have more flavor!! The technique of boiling the garlic cloves to temper their bite and to soften them is very clever, indeed!! Thank you. Always nice to get to see all of (or some of) the crew who work so hard to create such lovely video demonstrations. Everyone has beautiful smiles and always look happy. Be well and stay safe!!

As Indian I love momos and I can already tell that I'm gonna love Manti. But what I love about Refika's channel is her enthusiasm, her chatty manner, and her sweet crew members Interrupting her cooking. We can see the joy in their face and we can tell that they really enjoy what they do. This is something I can watch whole day sitting on a couch. Especially with my family. There are quite big size mantı s too. You can search with the words piruhi , hingel/hingel/henkel. Those are regional variations of ingredients, sizes and names.

turkish mothers will never praise you as a women cooking this dish there are a few dishes in turkey that are used to test the possible future "daughter in law" manti is on of them... the more they nitpick the least they like you...

No no it's expected of mother in law's to be picky about the traditionally picky dishes. If not they will be seen inattentive by outsiders. It doesn't matter if they find the dish perfectly edible. About those specific dishes, they must be picky. Even mothers reprimand their daughters for them. I am about 45 and at last my mom stopped trying to better my mantı pinching. She lost hope I guess😅. For some it's stuffed grape leaves/yaprak dolması. Some, it's pilavs. For most, it's mantı. Those are the kings of culinary pride. Others differ regionally.

I'm so pleased you did this recipe Refika. Last year in Cappadocia I took a cookery class with a Turkish grandmother and this was one of the recipes she taught me. A true labour of love as the ones we made together were tiny, but delicious. It was a special experience and was one of the reasons for me falling in love with Turkey. ❤

My parents are from Kayseri. In Kayseri even each village has their own style.When I was a kid I used to help my mom and her friends by making manti. It used to love how they come together and helped each other.

Aaahhh, dear Refika, thanks for this video, for me Manti has such a nostalgic value, as it was my favorite dish at my favorite turkish reastaurant 20 years ago in Cologne, where I was a student. They didn't offer it so often, just once every 2 weeks the mom of the chef prepared them, and they tasted like heaven... I think now I will try them myself. Thanks again!

Thanks for this recipe, my grandmother in Ankara showed me how to make them but I didn't have a dough recipe! When i was in Safranbolu I ate at a Kayseri Manti shop and they served with a tomato broth, it was amazing too.

Interesting. In Korea, dumplings are called mandu. I'm sure they influenced each other somehow. This one looks delicious and definitely different from what we're used to. Will try this recipe soon!

Oh Refika, I love your videos. The recipes are so good. Borak is so cute. Bahar too. Its so nice to see all of you enjoy. The love that you all share is amazing. I am from India and we have such a vast array of cuisine that it can't be covered even in a lifetime. I love Indian cuisine, but have started cooking your recipes too cause I like them and you make them simple to follow. I cook Chinese too. thank you for this video. Another channel that I watch just had just done a video of Turkish food in Germany and had Manti at one of the stops and it looked so intriguing. Then Refika made this video. Dumplings seem to be a universal human food and this looks very good. Your crew and group seem to love working together and sharing food. I was so sad to learn of the tragedy in Turkey and Syria. Please know that there people all over the world that care.

This looks so good - it reminds me a lot of the perogies and siberian dumplings that I grew up with, but with some new twists. I'd love to see some of the veggie fillings too - esp any with chickpeas/beans or mushrooms :)

This dish looks so yummy, even though I'm not a big fan of red meat :-D Would it be possible for you to show us the vegetarian variations? Also, I wanted to say that I'm so glad that I came across your channel - I've visited Istanbul twice but it was so hard to understand menus and what the dishes were, so didn't try much local food - but having the knowledge provided by your channel would definitely make me explore more when I visit Turkey next time :-) Thank you!

I love mantı, definitely would like to try making it myself. I like the size you made them. If I had to make too small I wouldn't bother at all due to time constraints. It's already hard enough preparing meals with a busy young family!

Though we watch you to know more about Turkey. But let's exchange some information about different cultures too. I hope you don't mind. In the state of West Bengal situated in the north east part of India. We have the desert version of this recipe, called "Dudh Pooli", meaning : milky dumplings. Dough : made of rice flour cooked in water with some sweetner for taste. Filling : shredded coconut cooked with jaggery. Soup : full fat milk boiled with sugar or jaggery until it almost thickened and the dumplings are completely cooked. Served usually after setting it in the fridge for one night or few hours.
