Incredibly humble, a joy to see. She is similar to Gordon in that she recognises she is only as good as the people that work for her. I visualise the pursuit of culinary perfection akin to many other art forms in the way your perception of perfection changed the closer you get to it. And the realisation there isn't only one path to that goal

Thats because his audience are casual cooks and people who don't cook. Why would he make videos about fine dining. Most of the stuff that he makes at his restaurants, you won't be able to recreate at home or most people won't have the time or money to do it

LichtdesMorgens Yes. Geese don't have gag reflexes so they don't feel discomfort. The geese don't die in foie gras breeding farms. The geese are all fed by hand and are way to valuable to be fed and raised for 120 dats to just jave them die. I eat foie gras once a month and animal rights actavists have blown foie gras production out of proportion and demonised the farmers.

LichtdesMorgens I don't know when the lat time you went to the Poultry section at the market.. but a Goose costs $70 for a small one. A Duck costs $20-$40 depending on breed. a pound of foie gras is about $80. so yeah

When you have a tasting menu of like 8 different courses (sometimes a lot more) you dont want to have huge portions. Small is quite okay. You want to be able to finish the meal, and if you have huge portions, you'll be full by the 3rd one.

They do huge tasting menus instead of one dish. So you usually end up paying somewhere around $150-300 per person, depending on the restaurant. Believe me, you will be more than full. You probably won't even finish all the courses.
