I would NEVER have thought to make the crumble with a mixer! What a great idea, I just made it and it was lovely, and using the mixer was a godsend! And cooking the rhubarb in the oven first..... great idea.

Here in North America we are crazy about cinnamon but I am going to try this recipe with just the ginger which I think will be quite nice. I tend to find our neighbors to the south don't like rhubarb as much as Canadians. Another addition to the crumble which might work well are strawberries and that is a classic combination here. However, I think I will try your recipe exactly except I may cook the rhubarb longer and bake it with the crumble topping for more time as well.

Followed this recipe, the rhubarb needed 25 mins to soften, not ten, and the crumble needs half an hour, not ten minutes, at the temperaturs given.

I agree it was still hard after 10 minutes and his recipe online says 3 inches of rhubabrb sticks
