Great description and the ribs look fantastic! My 7-yr old Rec Tec 680 is still working great (I replaced the PID unit last year) and you're right - their customer service is second to none.

What kind of knife are you using? I have ceramic knives, a buck and others and keep them sharp but they don't stay that way for very long. I just received my RecTec 340 last weekend and I have a terrible bout of gout in my right wrist and I haven't been able to do anything yet other than watch videos and am rearing to go!

Bob Scalise They can definitely vary. I believe a lot could depend on size of the racks. Then weights and thickness on the racks we did were really comparable

scott Michel we use it to top vanilla ice cream, or fold it into some cool whip. We also add a couple teaspoons to some fresh strawberries and let sit overnight!!

What's your que as to when the ribs are ready to come off and rest? Are you using internal temp or just feel?

TheCkiser usually pull them around 190-194 internal temp. But mostly go by the bend when you pick up the rack.

Just a FYI Costco ribs come with no membrane!

I just bought a three pack of spareribs and the membrane was still attached. You must have got lucky or the butcher at your Costco does a better job.

The baby back’s I bought at Costco this week had no membranes. Can’t speak to the spares. Swift brand pork.
