Rich, tangy LEMON BARS recipe! Super easy and not-too-sweet

These lemon bars are wonderfully tart and not-too-sweet, with a crisp, buttery crust on the bottom and a luscious lemon filling on top!

INGREDIENTS:
🔹Shortbread Crust
▢2 cups (240 g) all purpose flour
▢¼ cup (30 g) cornstarch
▢½ tsp salt - omit if using salted butter
▢1 cup (120 g) powdered sugar - also known as icing/confectioners sugar
▢1 cup (226 g) unsalted butter - cold and cut into cubes
🔹Lemon Curd Topping
▢2 cups (400 g) white granulated sugar
▢2 tbsp lemon zest
▢6 large eggs - room temperature
▢¾ cup (172 g) lemon juice - freshly squeezed - do not use bottled lemon juice. Zest the lemons before juicing them. Can increase up to 1 cup for a more tangy topping.
▢⅓ cup (40 g) all purpose flour

I’m definitely going to make these. My family loves lemon bars! Suggestions: crumple up the parchment paper, then flatten it out, before putting it in the pan. I’ve also seen where people wet it and wring it out, but I haven’t tried that. I like to crack the eggs in a ramekin one at a time before adding to the rest of the ingredients. That way no shells or bad eggs will ruin the mixture. Would pouring the lemon liquid over the baked cookie crust while it’s resting on the pulled out oven rack be ok? I’d be so fearful of spilling it if I had to move that much liquid from countertop to oven. Thank you for the tip on straining out the lemon zest. I’m not a fan.

Hi MK thank you for posting your wonderful recipes, I’ve made your carrot cake various times and it’s always a hit, people can’t believe how yummy it is 😊. I have a few questions but I’m not sure if you have the time to reply. Can I ask about cotton sponge cake? What do you think about making it into a wedding tiered cake (3 tiers, not that big tiers, like 10”, 8”, 6”) cake with fillings and fruit in the middle? Do you think it’s too delicate to support the weight of course using plenty of wide dowels. Because it’s such a lovely sponge I was wondering. 😊

Otherwise i have tried your 3 - 4 recipes just replace the eggs with yoghurt and even then it was loved by customers.Thank you for sharing and doing such incredible hard work. I know what it takes. Once i heard you saying that you have some health issues , i hope and pray you will recover from it soon. I also suffered some serious health issues and couldn't recover from it completely. Can margarine serve as an alternative to butter?

Hi there! :) I haven't tried using margarine myself, but butter will provide a better taste but also may be better for the structure of the crust as margarine might not set as well :)
