Ripe Papaya Balls/Paw Paw Balls/Lime Balls

Paw paw balls are normally made with green pawpaw/papaya. This is a tryout using the ripe papaya to see what result we will end up with. I end up with a gummy and chewy candy that is very delicious. I just found my new favorite snack.
Recipe
2 cups of grated papaya
1 1/2 cups granulated sugar
1 teaspoon or 1/2 lime juice
1/4 teaspoon lime zest
1 teaspoon or 1/2 teaspoon vanilla extract/essence
* You can use any other extract if you prefer (coconut, mint, etc.)
Two drops of food coloring if you want to make different colors
* Make sure papaya are not fully ripe

I try tried it but it didn't dissolve. did I have to add back the liquid that I squeezedcrommthe papa?

@@Ethan-zw6mz no you do not have to add back the liquid. The sugar suppose to dissolve and after the mixture is cool you roll them. Store them in the fridge after cause this paw paw is ripe. Do not take it off the stove until all liquid is gone.

I tried it but I thought my paw paw was looking just like yours but apparently it wasn't so I couldn't squeeze out the juice, so I just dried it on low heat, came out a little soft but tasting great. Used less sugar too.

You can try and used the exact recipe with the amount of sugar given and see the result. The juice was hard to extract from the papaya since it was half ripe, but you can try again.
