Roasted Acorn and Butternut Squash
1 acorn squash
1 butternut squash
¼ cup olive oil
salt, pepper
1 tsp. poultry seasoning or 1 Tbsp. fresh thyme or rosemary
garlic powder (optional)
Grated or shaved Parmesan cheese
Preheat oven to 350 degrees. Prepare squash by washing thoroughly, halving, removing seeds and membranes, and dicing into cubes. Spread evenly on 1 or 2 baking sheets. Coat in olive oil. Season to taste with salt, pepper, herbs, and garlic powder. Roast in the oven for about 40 minutes until fork tender (you can toss the squash periodically with a spatula to cook evenly). Sprinkle with freshly grated Parmesan cheese. ENJOY!
