The oil helps with the texture, adhesion of the spices and browning. Without the oil, the chickpeas would turn out dry, and possibly brittle. I use a little olive oil, because it is healthier than the other oils.

Olive oil is good for you, healthy fats are essential if you want to be healthy. It has many benefits for your body. That small amount wont hurt anybody, and it makes them taste better. If you're eating these with a salad it is essential to use Olive oil because you need healthy fats to balance your meal. Educate yourself on nutrition you'll feel better.
