To get the cracklin', just take the skin off when the roast comes out of the instant pot and put it in the oven by itself. You can do this with roasted turkey skin too - really great!

Awesome recipe. I got incredible results with a couple slight modifications: 1. Add ground pepper and garlic powder to seasoning AND used chicken stock rather than vegetable stock 2. Placed in the instant pot skin side up 3. Pat dry with paper towel before placing in the oven for better cracklin result It was awesome!

Ginger Eucalytus Green Tea: 1/2 knob ginger, scraped & chopped 4-5 dried Eucalyptus leaves or 3 drops Eucalyptus Oil 1 tsp Green Tea. Boil for 4 minutes in 2 cups water sweeten with honey. It's strong, but it clears you out. Get the rest you need and get dude to cook for you!

Hi again Flo.I'm doing pork shoulder in the IP tonight but with a variation on your's. The best way is to remove the skin first in one piece. Cook the pork in the IP as in your vid. Then cook your skin seperately under the grill (you call it a broiller) Perfect crackling. Great Sunday roast. John M (in the UK)

Great minds think alike, John Marshall. That is exactly what I was thinking when I saw how Flo's crackling came out. I usually separate the skin from the pork shoulder and lay it on top of the meat when I roast it in the oven. Now I'll cook the meat in the IP and cook the skin under the grill. It's the best of both worlds. As for Mr. Dude/camera man, next time Flo gets sick, cook her a nice meal and let her rest. BTW, I love your banter; it's so funny.

I've smoked these little shoulders in different types of slow smoker's with great success but the last few years married to a gal that doesn't understand real BBQ I just smoke the meat, whatever that happens to be, for a short time, it varies depending on if it's some kind of bird which will be less time, but smoke it, whatever, for 30 to 60 minutes then wrap it tightly with whatever you're favorite BBQ sauce or just a dry rub and slow cook it in the oven and depending on what effect you're going for you can also let it rest after it comes out of the oven, cool, sauce it slightly again, place it back in the oven unwrapped preferably on a rack up off of the drip pans surface, cooking on say, 300 to 400 watching it closely to get it to caramelize to your desired visual appearance but make sure to keep a close eye on it because you can burn the sauce especially if it's got a high sugar content.

Strange watching this during covid isolation and not realizing at first when it was made. I like that this didn't follow the standard script of of ...how easy - how perfect.... I'm glad the knife wasn't sharp. I felt more like a fly on the wall than an audience member. I wasn't comfortable with the teasing but that's because it took me years to quit that habit myself.

Just watched the your video and currently have the picnic shoulder in the pressure cooker as we speak. I'm sorry you were sick but as as loving husband myself of 31 yrs. I don’t agree. The traditional method is not best. It is good the same as this recipe. I made it today and the only thing that I did different is that I cut the skin off the pork and pressure cooked it on top of the meat until done. Then, separately, I broiled the skin in the oven. Yummy. I will continue to cook the pork (we call it pernil) using this recipe and experiment with different variations until I come up with a favorite for me. Thank you for your time and hope that you got rid of that cold by now.

The word picnic is a code word, it means that chunk of meat is straight off the hog, no smoking, no salt treatment or anything has been done to it(unless it says otherwise) Most hams and pork in general have been in a smoke house and heavily salted or sugared and could actually be eaten after a quick warm up or cold if that’s the way you like it. Picnic hams take 3 times as long as regular to cook.

Looks good. I think that the pot adds a lot of moisture during the pressure cooking process. If the skin was placed under the broiler or salamander, it should fry and become crispy. All in all, it still came out good from what I saw. :)

I wonder if after you removed it from the pressure cooker, you crispy browned all sides of the the skin under the broiler.. Or remove the skin and while the pork is pressure cooking, bake the skin crispy, then chop it up and serve it as a side topping to sprinkle on the plated pork..

Flo Lum removing the skin does work. That is what I have done in the past with a slow cooker version. Just season it generously since it won't be absorbing flavor from the shoulder.

Maybe try drying and salting the skin before roasting it in the oven, or even some baking powder. Those are the 2 methods I know of crisping a skin

The gravy looked good, nice dish served over rice or noodles. I'm sticking one in a roasting pan here in a minute. That pulled pork is good lots of ways, with lots of sides. Biscuits, maybe. Plenty of time to consider options while the roast is roasting.

Do you use the slow cooker function ever? I used it last week. It turned out tender as anything in 4 hours. It was a pork butt. I made a rub with five spices. I did not like the flavour though I like Asian cooking. Take care of yourself. Don't answer till you are better. Merry Christmas!

I have only ever used the slow cooker function to simmer ratatouille. Five spice has a distinct flavour and is made up of cinnamon, fennel, star anise, cloves and peppercorn. Happy new year, Joelle!

Hey Mark! Sorry for the delayed response. We will get Dude on camera soon! Setting the temperature for Sous Vide is hit and miss. I stick a thermometer in the pot to make sure it comes up to the temp I want. In the app, you have to fiddle with the temp by creating a new script, set temp and set the time to several hours and making adjustments as you go. Which is why, in the end, I took the plunge and got a Joule! Hope that helps. I might do a "how to use the app" video.

I would increase the cook time by at least 50% since it would be a solid piece of frozen meat and also depends on the size of it. If the meat was cut up in pieces, you could cook it for same amount of time. The "come to pressure time" would be longer though. Hope that helps.

DUDE! That's huge! A 3lb frozen solid pork roast took me over 90 minutes to pressure cook. If I were you, I think I'd thaw it first.

If you had cut the skin into squares I think the skin would have dried and crisped faster. The skin looked too swollen with moisture to make good cracklins. It still looked delicious.
