As you're using two trays, I would suggest that you place all the "dense" vegetables in one tray and all the vegetables that need less cooking time into the other. I usually roast the dense ones for about ten minutes before starting the roasting of the less dense ones. The results are even cooking throughout all of the vegetables.

We made roasted vegetables the other night. Wish I had thought to roast garlic with them! We had a lot of veggies so we did 2 trays, one of light weight veggies which we put in the oven about 20 minutes after the denser tray of veggies. We went super light on the olive oil because we try to go easy on this type of fats. The sweet onion that we used became caramelized and was amazing! Next time, we'll use at least 2 of them... Yeah, the recipe looks easy enough. We always grilled them covered in olive oil, then added sea salt over them when done, my mother has high blood pressure [try not to actually cook them in salt, since sea salt is so strong, adding it at the end is enough.]

I have been roasting vegetables for probably 30 years and I like to put them in a great big bowl and then add the seasoning and the olive oil and use my hands to code it all it does a much better job than doing it on the tray. Just an FYI and you will learn that I am full of FYIs! :-)

They look delicious, my mouth is watering...again! 😋 A tip which Mary Berry (you might have seen her in Bake Off) uses, put the veg into a plastic bag, add the oil, salt and pepper mix it around, then pour onto your baking tray, all the veg get completely covered. I wonder if curry powder would be good in it, I love curry, I love roasted vegetables, especially sprouts, they completely change flavour!

Actually it isn't half will remain at bottom of pan. Olive oil is a staple in the Mediterranean diet . It is the healthiest diet in the world. The people in that region consume at least 3 tablespoons per day...they have the lowest rate of heart diseases in the world . Olive oil has omegas necessary for heart health.

I am not a professional cook, but I see a lot of basic cooking mistakes here. you use TOO MUCH oil, the wrong kind of oil, you put all the vegetables in from the begining and you use the wrong cooking function of the oven. How should you do it? You cut the denser vegetables first, put them in a bowl, spray them (yes, use a oil spray) with 2-3ml of SUNFLOWER OIL, put salt and spices if you want, stir the bowl and then put them in the oven. use the GRILL function (with ventilator if available). after 20-25 min take the tray out to turn the potatos on the other side and NOW you add the rest of the vegetables. Put all in for another 20-25 min. after you take it out dont put olive oil on it (it is not a salad). prepare a tzaziki sauce, a sourcream and garlic sauce, a sourcream and chilli sauce. that's it! advices: do only 1 tray at the time. avoid heating olive oil. use sunflower oil for cooking and frying. use olive oil for salads and quick stirfry only. P.S. the potatoes on the lower tray were only half done. :))

agree with Raul D. You can even add sugar snap peas, if you add them with mushrooms and onion. If you leave the yams, potatoes,and carrots in longer, they will carmelise, and that tastes almost like candy!
