yum!!! I would have held back some of the cooked mushrooms before emersion or add more so you can have some chunky soup :)!

You can definitely do that if you prefer. I tried to make this similar to the canned versions you see in US grocery stores, but leaving some bigger pieces of mushrooms would probably leave a nice textural contrast, too!

You could just leave it out to be honest, the chicken stock should be enough - I just like a bit punchier of a flavor.

I suppose you could leave out all of the chicken broth to make a 'condensed' version, then add chicken broth to add the liquid as you would condensed soup.

You can just omit the cayenne if you prefer - if you want to change the flavor some you could add paprika, though. Smoked paprika is something I use frequently!

Would the texture of the soup be off if I popped the mushrooms in a blender before cooking and then added it to the pot? My immersion blender bit the dust.

The blending helps the fat emulsify into the soup itself too, so blending only the mushrooms will still leave a layer of grease/fat at the top. You could likely add the soup to a blender and pulse it until combined, though I'm not sure how small that would make the mushroom pieces. If you do this, just make sure to leave a gap in the lid (or open the hole at the top if you have one) so that the steam can escape.
