Russian Zephyr Recipe

Ingredients:
For syrup:
- Water 130 g
- Sugar 200 g
- Agar-agar - 3-4 g
For whipping:
- apple puree - 100 g
- Sugar - 100 g
- 1 egg white
Description:
1. Bake apples at 190°C for 30 to 45 minutes until they are cooked through and tender
2. Leave them in a sieve to drain (in the refrigerator) for several hours
3. Place apples with skin into a blender and blend until smooth
4. Beat on high apple puree, sugar and egg white until the mixture is white, fluffy and firm
5. Prepare piping bags, flavoring, food coloring and baking parchment
6. Mix agar-agar and water and put the saucepan on low heat. Once the mixture boils, let it boil for a minute or so, or until agar-agar powder is completely dissolved
7. Add sugar and boil the mixture to 110 C or to a thick consistency
8. Pour hot syrup into the whipped mass and continue whisking until stiff peaks
9. Add food coloring and flavoring
10. Pipe out the zephyr to a baking parchment (you should work fast because the mass becomes firm quite quickly)
10. Let zephyr stabilize for 6-12 hours and sprinkle with powdered sugar
Shelf life - 3-5 days at room temperature in a closed container.
