I absolutely loved hearing you say you were waiting to wake up the children because you hadn't told them the night before, and it wouldn't be respectful to wake them early. Children learn so much from modeling their parents' behavior, and by respecting yours, they'll grow up respecting themselves and others. Today's video explained part of why your boys seem so peaceful and joyful. 🩵

I loved the video on “chores”. It shows real love and respect for the children and takes consideration of teaching the children with love and life skills. It’s the only way children can grow up with the right tools for success in life.

I canned 32 quarts of pickled pepper cabbage after watching your video several times! Guilty of absolutely loving this as my grandmother always made this for my German grandfather, and I don't understand why I wasn't regularly canning this delicious side. She served a small bit on all of us kids plates with dinner and supper. I walk backwards in time listening to you gently explain your methods and ingredients, because you help me to understand what I had been too young to know I should of paid better attention when she told me so many of her methods. You do a wonderful job. I had to turn the volume up to listen to your son say he didn't think the dog had a wonderful mother like he did who made [salsa] hahaha. Such a beautiful wholesome way to raise children, I'm happy to see it in today's world. Please know you brought joy to this grandmothers life. Good job!

I enjoy your channel so much. Your family projects are so helpful to watch. It is just my husband(age 69), and me(age 68), but we enjoy canning so much. He is so helpful and I could not do it without him, but together we get it done. This week we canned 8 half pints of pizza sauce, 9 quarts and 5 pints of tomato juice. 17 pints of salsa, 14 quarts of potatoes and 14 quarts of french fries. I guess you have to love it to enjoy it. You and your family are so inspirational and peaceful to watch. Thank you.

I don’t have a garden, I don’t do canning, and the extent of my preserving is freezing bought produce and making the odd jar of something (not using either water bath or pressure canning methods)…yet I really enjoy watching you doing all this stuff for your homestead! I also love the fact that your kids get so involved. I get that it can be such hard work for you but they are picking up some amazing skills, and when they look back they will know just how fortunate they were to have this kind of background, rather than one where everything came solely from a supermarket shelf (I now know how lucky I was to have a mother who knew how to feed a family, even if I didn’t always appreciate it at the time.)

Oh what a little sweetheart…making his momma a “flower girl” from her flowers! A memory/video to keep ~ especially as he gets older! Love boys who enjoy being with and working for with their Mommas! I am a Daddy’s/Grandpa’s girl (more so my Mom too now I’m a woman)…but…It’s beautiful to see Mothers and sons together, as it teaches them how to treat girls/women and others as they grow up…especially if they get married! Obviously, the same goes for girls! I can change my own tires, oil, etc. It’s truly beautiful when we help one another….and as a family…it only brought us extremely close, and remain even more so to this day! Many Blessings🇨🇦❤🇺🇸

When you are straining your tomatoes, catch the juice...it makes a light tomato juice. I can that also and use it in soups and stews or to rehydrate tomato powder to paste consistancy. I get a plethora of cherry tomatos, so i dehydrate them and turn them into powder...skins and all.

Great idea to use the strained tomato juice! I’ve been dehydrating my Cherry/grape tomatoes too! They’re a great size to use in recipes for “sun dried” tomatoes.

Excellent. I never understand removing seeds in Zucchini or tomatoes. Then there are jars of FIBER you can buy. Why? Eat your fruits and veggies, as is. No peeling. This is what I do. Good job, Mrs. Zimmerman. I am on a salsa kick, so this is perfect. Thank you.

You’re lucky you got tomatoes. I planted 5 plants last year and only got 3 tomatoes. I’m buying them now at the farmers market. Great tips in your videos, as always.

Growing my own plants from seed from Bakers creek (Mortgage Lifter and Brandywine) in my garden loaded with old barn manure, chicken poo and mulch gave me huge plants that came out the top of the cages and I added strings and they grew up and finally trailed along sideways. I had around 150 quarts off a 20' row easy not to mention tons I passed along. My all time favorites. Well worth starting.

Your video is great, on so many levels! There is a point where Kendrick mentions how wonderful his mom is, and if his pup could have such a wonderful mom.. that , if nothing else.. says so much about you. I made this just now - by myself, no wonderful blessings helping me - I followed the ingredients to a T and only got 4 quarts - what a bummer because in tasting it - it was marvelous! No sugar added. Maybe if the extreme heat doesn't kill the tomatoes we will try again - How do you measure your 14 cups? I measured it after they were cut and drained .. . Thank you!

Your boys are so sweet! I love how they were appreciating what a great mom they had, while washing up. How sweet. Such a good example for today's world! My tomatoes also seem lke they are forever green. i go out to the garden, hoping to see some color change, but not yet. This week it is getting hot again, so i am hoping that is the key! I guess that is our midwestern living :) I just made a wonderful chicken salad with some canned chicken from last season, and this years Zucchini relish. It is so nice to have the convience of canned meats. I know a lot of people are leary about canning meat, but I do like to have some on hand as well. Thanks for sharing your wonderful family, and how you do tings. Be blessed,!

HI Ruth Ann. I love your videos and how you explain things with the logic behind it. I found your channel this Summer (2023). My main reason to reply after some time is on your curls. I am from Iowa and German descent and have the curls like you have, which is a rare thing and people envy. I think it came from the Schulz side in NE Iowa. On this video I see the flower children with toothpicks we made as a child and then I realized how this little thing has been forgotten and was happy to see it. I cannot remember the name of the tall flower used. Thank you for sharing that old school German heritage in your lessons.

In the past I lived in Lancaster county in Pennsylvania and if I had a question on any aspect of homesteading, I would seek out the mentoring from my Mennonite/Amish brothers and sisters. They are the salt of the earth. I learned a lot and I'm a better person for my interaction with this community. Thank you and I subscribed and hit (smashed) the "thumbs up" button. We are programed to use vinegar 5% or higher for proper shelf life. With My salsa (pico de gallo (red-tomato) or salsa verde (green/yellow-tomatillo,) I use lemon or lime juice for a bright flavor that doesn't bite the tongue so to say. Lemon and lime juice are slightly more acidic than vinegar. The higher the acidity the safer the canning. Also, your use less then using vinegar. I prefer the tastes of lemon or lime juice over vinegar, as some people feel it has a milder flavor. I don't remember cilantro in the processing, I use one part cilantro and 2 parts parsley. And I don't cook the herbs, I include raw during the canning. Some people think cilantro by itself is bitter in taste. Another use, and the children may like this, I will blend smooth the salsa (red or yellow) to create enchilada sauce. Enchilada are a tortilla rolled and filled with a seasoned mixture, usually containing meat, and covered with a sauce flavored with chiles.The whole thing is baked in the oven with cheese on top. The people I know where family friends, the husband "English" and wife ex-Amish. I believe during rumspringa she decide to move on from the church. They met and fell in love, married after her decision not to baptize. Well look forward to watching more videos.

A really fun thing to do is plan a family vacation to Michigan and stay somewhere on a beach for the kids. Then go to one of the blueberry farms and you can pick your own. Friends of mine come home with 10+ ice cream pails full!

Whenever you show your garden I look for the row of marigolds and kale...that's so pretty! I am going to do that in my tiny garden this year. I've been criticized for "wasting space" in the garden with flowers, but I sneak them in anyway. ( never combine cosmos with dill! Its pretty but hard to sort thru to harvest the dill!) I'm an Iowa girl too, and I really feel the same way you do in the garden and the morning sunhine. That's the best time, and the best way to enjoy a cup of coffee, birdsong, and sunrise!

I tried your recipe and made 16 pints. I did do a couple minor modifications. Someone asked me on Facebook if I could share the recipe so I posted a link to your video.

Followed the recipe except doubled the jalapeños, but only got 4 quarts instead of 7 and about 30 oz of tomato juice. Simmered for only 10 minutes. It tasted alright (don't have anything to compare to ). Let's just say: all that hard work won't go to waste. I would eat it, it is not bad, maybe better than store bought as it is homemade. Thank you for the recipe.

For those who don’t have the tomatoes to can and have a fruit stand nearby ask them if you can get the tomatoes they discard. Yes some will be bad to bad to make anything from but a lot will just have small bad places to cut out . No they may not be Roma tomatoes by sofas the slicing tomatoes for me have work out great. . Just saying. Hopefully my garden next year will give me what I need to can .

we also had double tubs from the wringer washer, I would wash jars in those tubs, would wash cabbage and grate on my great grandma's cutting board, used those tubs for so much large processing of of veggies....in the south it is hot the tubs were under shade trees....one summer mama and I put up 1200 jars of food...she would can tomato juice in gallon jars....jelly in quart jars, my family would go through the different jelly jars that she did like you started using quarts....

just wanted to add a little note that you probably already know. We live in an area with hard water. I put 4 tbsp of vinegar in my canner and it limits the calcium on the outside of the jars.

Your yellow tomatoes look like my heirloom tomatoes called "Rainbow"... They have red stripes going through them that are tasty and beautiful. Good for your husband who was sensitive to tomato acid.

In our household i do all the gardening, canning and cooking. I stumbled across this vid and glad i did:). You have such a wonderful family by the looks of it, and those kids will have skills in life that many dont have. Have a great 2024. Scott

I make mine in bigger chunks because cooking reduces size and bulk...I also don't drain, but cook down with my tomatoes, no vitamin loss

@@cynthiafisher9907 to some degree, but it isn't overcooked just cooked thru then water bathed for 10-15 min, the nutrients lost is if you toss any juice away from the tomatoes...its STILL very good because its the kinda fruit cooking helps as long as its not OVERCOOKED

This is good to see, family working together. The children are learning self sufficiency. You don’t see much of this anymore. I grew up on a farm in northern Minnesota near Canada. We did this very thing every year. We would can plenty enough until the next season and there were 6 of us kids.

I just your channel last evening & I've already watched 4 of your videos. I would love to try the sour dough bread. I am 71 & just learned to make bread 1 year ago. I have 1 recipe & it's the Amish Sweet Bread. Now I know why my bread was crumbly & a little dry. Thanks to you. How do you make your own starter? Your bread was beautiful. I also watch the Hershberger's Miracle Homestead. It's 2 sister's, never married. Dorothy & Martha who has a twin brother who when born was oxygen deprived & left mentally disabled. They take care of him. All of their lives they have taken care of family members & their parents when they couldn't take care of themselves. These sisters are amazing. So nice & kind. Martha bakes a lot & they sell their bake goods to help support them selves. People order bread, cookies, cakes etc. This also helps with their income. Anyway You might enjoy watching Martha make her Sour Dough Bread. She makes a huge batch to sell. This is the link to their channel. They are of the faith that you used to be but I don't think it was the same as yours at all. I’m in Iowa! I would absolutely love to visit. I’m looking for my own little bit of heaven but land is so pricey now. Especially in Iowa. Glad you’re holding up in the heat. My tomatoes are turning slowly as well. I’ve taken to putting them in the freezer until I get a small batch. If they turn all at once, I’ll be swimming in them. 🙏 I purchased a manual food mill (not expensive) for off grid purposes and it is wonderful for tomatoes. I save the peels to dehydrate into tomato powder which is excellent for thickening soups. Also saves the juice which I can can for tomatoes juice after running through cheesecloth. So many products from a beautiful fruit/vegetable.

I really enjoy your videos. I am allergic to tomatoes, and yet I still watched it. I made peach salsa years ago and it was awesome. We have five children and now they have their own families. I love canning. I have to can my own due to my allergies. Thank you for your videos🤗🤗💞💞💙💙

Hi Mrs Zimmerman and sweet family! I’m a morning person too, just the quit time in the mornings is soul soothing. I’m canning salsa this week too. I love salsa and home canned is so good since you can adjust the seasonings to your taste. I had to order some clear jell this week, I should have already gotten it. I found a Mrs Wages sugar free pectin and I’m wanting to see how it does with some jam. I would rather have the fruit taste as the sugar sweetness. Your pie filling is beautiful and I’m sure it is delicious. I need to do tomato sauce and juice soon. Your larder is filling up fast. You’ve been busy lately. Canning season is hectic, but so good to taste the deliciousness in the winter. I hope you and your precious family have a blessed weekend!
