They age over the course of the season. Thats why in the beginning of the seasons its rush hour for commercial fishing. Yes it is freshly caught but at that point your getting the old worn down fish

Commercial fisherman from Alaska here! The reason for the color difference actually completely depends on what the salmon eats. Farmed salmon is dye colored so they are irrelevant. But take wild sockeye for example and they are vibrant red because of all the shrimp and crab in their diet. The salmon you caught is a King Salmon and they are aggressive hunters, preying on whatever they can get their hands on. They are usually less vibrant than sockeye but more fattier!

The reason for the color difference is because it was a fall salmon that's about to start it's fall run and die it's body is changing. But cooking wise that salmon was still early enough to taste better than that greasy ass lake trout but both should have been smoked.

The reason for the different coloring in the salmon is because it’s actual salmon that eats a healthy diet. The stuff from the store is farm raised, and they’re most likely eating a feed or each others feces. So to get the pink color they add dyes. Fresh caught or American sockeye is the best you can get because it has all the fats and the muscles have been worked instead of being in a very stressful enclosed environment.

Hi commercial fisherman from Alaska here! The statement you made isn’t entirely true but I get where you’re coming from. While farmed salmon is all dye and completely fake when it comes to color, wild is not. Sockeye “red” is extremely vibrant red because of the crab and shrimp that is abundant and in their diet here in Alaska. While Chinook “King” salmon like the one he caught here are veracious hunters and target anything they can get their hands on. Makes them a lot bigger and fattier than other salmon. On the contrary many feeder wild “winter kings” don’t have red foods in their diet yet, their meat is completely white!

Kings from the great lakes in my opinion and most people's opinion tastes like shit because the meat is so fatty and does not taste anything like the Pacific Salmon you buy at the store.

We took trips to northern Ontario as kids. Once we caught or limit in walleye we would set up and troll for lake trout. I was the only one that would eat them. It was real remote so all I had was salt lemon and pepper. I would wrap it in foil and just cook it slow.

That is a late season salmon. They darken in the fall and the 4 year olds are getting ready to die. Catch them in June when they are bright silver. Meat is much better quality. Also, the color is variable on all fresh water salmonids. Depends on what they’ve been eating. Some coho can be as red as dyed, farm raised fish. Laker meat can be red, and salmon meat can be light pink.

the orange coloring comes from crustaceans like crawfish or shrimp these fish are feeding on I got confused though because the salmon meat doesn't look as red as it usually does so this fish might have been primarily feeding on smaller fish instead
