I made this bread yesterday as an experiment to see if this made a decent loaf for toast! You see that I have found that homemade bread does not make good toast (the crust usually burns whilst the crumb only slightly colours and the texture is grim). However this recipe is the answer to my prayers - as the toast it makes is nothing less than magnificent! Okay, I altered the recipe slightly by substituting 20% of the white flour for stoneground wholemeal flour. It also makes a great sandwich! The Pullman tin I used was supplied by 'Lakeland' (in the UK) and measures 21.1cm in length. For those really long Pullman tins I would think you would have to double the ingredients, at least! Thanks very much Titli as I have been baking bread for some 50 years and this is the only recipe that does produce fantastic toast!

I rely on your recipes quite a bit as they never let me down, we have four children with age range from 7 month to 5 years old, I make everything myself even down to ketchup. I think it is so important to know what you are feeding your family and as well there is something so satisfying about watching everyone happy and enjoying the food you have made. Anyway just wanted to say thank you you are quite an inspiration to me :)

When I use the oven to make oatcakes they need about 50 minutes at 150 degrees, and this is the first bread recipe I've found where the bread can go in at the same temperature and thus, at the same time. You've saved me on electricity! Many thanks for these great bread recipes. I've always wondered how English crumpets and muffins were made, and thanks to your site and very clearly explained videos, I will be giving them a go too.

THANK YOU for posting a recipe using the REGULAR 9" Pullman pan.. EVERYONE else uses the huge 13 " size and it's too much for one or 2 PEOPLE to use up quickly enough. I am excited about trying your recipe, but will use a stand mixer, (arthritic hands can't handle 5 mins plus of working the dough. I am figuring on about 4-5 min of neading w/dough hook..let me know if you have any other timing that you suggest .

I would think instant mashed potato flakes could substitute. I've seen other pain de mie recipes using this ingredient.

I am in the process of making this loaf but sadly it is not rising as it should. I’ve followed recipe to the letter except for, I substituted corn flour for the potato flour. This could be the reason why as I noticed another subscriber had the same problem using substitute cornflower. Anyway, I’ll not be beaten and I’ve ordered some potato starch from Amazon, couldn’t get it locally, so I’ll let you know results when I do. Many thanks for recipe. 👍

Hi, I tried your recipe with the exact measurements but for some reason after one hour in the pullman loaf pan, the dough did not rise all the way to the top. It reached 70% of the tin height. I sticked to the recipe but substituted potato starch with corn starch. What causes it not to rise enough ? Anyways, I covered it and decided to bake it but after 30 min it didn't rise all the way to hit the cover. It stayed at 70% of the tin height. Your help is appreciated.

Please, would like to ask the dimensions of your Pain de Mie pans, as the most reasonable pans I found for sale in the USA were 9"x4"x4" and 13"x4"x4", I ask so can somehow figure how to adapt the recipe to the differing sizes. One thing I've learned about this recipe recently. If the lid touches the dough while you are putting the top on it can make the bread sink a little in the middle. What I'm very careful to do is make sure it has not yet risen above the edge of the tin before putting the lid on. I then leave it to rise further with the lid on. For 100% wholemeal it may be worth allowing it to rise for a further 40 minutes after putting the lid on.

Melissa Stevens Pastry flour usually doesn't have a high enough protein content ( = gluten) to make decent bread.

Called a pullman loaf/tin because the originals were designed to fit 4 at a time into the Pullman train's oven so that passengers had fresh bread each day of the journey. The originals were much longer

Nana Raef Howdy Nana, I used a small cookie sheet and put it on top and added an antique cast iron clothes iron to hold it down. It worked mighty fine. Hope this helps.
