The term "minus down" could also apply to things removed from a sandwich to improve it. Like anchovies.

That feels like "minus up", in that the score went _up_ by _subtracting_ an ingredient, as opposed to the score going up by _adding_ one (a plus up).

Cucumber would have been a better plus-up for the Marmite and chips sandwich, rather than pickles. It already had enough salt and strong flavor.
