Love a panuozzo. I worked for a sandwich shop for a couple years that made a panuozzo that'd knock your socks off! Mostly the same, excepting they'd do the toasting with the mozz on top so it'd brown slightly, then sandwich in arugula thin-shaved white onion with a fig balsamic dressing (after toast, so it'd keep the vegetal crunch).

This would be a great sandwich to dunk in Bagna Cauda* * Bagna càuda is a hot, flavorful, and umami-rich Italian dipping sauce or sauce made with garlic, anchovies, olive oil, and butter: Meaning: The name translates to "hot bath" or "hot dip" in Piedmontese.

This is such a "BOSS" sandwich that I felt a little sad for the Avocado sandwich that was "next up"! It's like Led Zeppelin opening for Nick Drake (look him up, fellow kids). I tend to lose my will to live when step #1 is "make the dough". Might I suggest, since this is a Trader Joe's friendly channel, getting a bag of their ready-2-go pizza dough and proceeding from there. In my experience, that particular pre-made dough doesn't get too bready and works well on the old pizza stone or oven heat cast iron pan.

The chili paste sounds like a good idea. Why are people so fond of chili flakes? The ones I can buy all seem to be rich in seeds, and the feel of a pepper seed (especially a thoroughly dry one) between my teeth is strangely unpleasant. Do most people either like or not mind biting down on a chili seed? Am I a freak because it annoys me and I wouldn’t wish it on anyone else?
