Good video. Santa Maria type grills are great for that. Just a word about the Gabby I've had about five years. The spun iron grill grate will warp after awhile and mine had a crappie weld which caused the grate to pop out of the guide. Overall, I got my money's worth out of it, but I'm buying a better built attachment next time.

If you had them Taters they serve that are as big as a football, I would have thought I was at a Santa Maria Grill Out... I NEED 1 of the Gabby's Grill. This KY Boy LOVES TriTip. Grill em or smoke em to 203. I will eat it either way. Loved the look of the cook to mimmic the large set up only this is on a person size grill. Great video...

Seems everyone is afraid of the fat, BBQ tri-tip almost weekly and the best imho is leave a good amount of fat, "burn" char hot hot, off the fire until 130, rest and enjoy. saw you posted this on the kern county pit masters, looks good big dog as a santa maria native you just about nailed it to the T, weve always left about an 1/8th inch of fat on the cap side and let it char out a little. its all preference right! If youre in or a round the bakersfield area get rid of that little webber and hit me up i build custom santa maria style bbq's can even have it set up to rotisserie over a good wood fire

I grew up in Central California. I've cooked hundreds of tips. Leave most of the fat on the meat. It absorbs the spice but mostly the salt which is a big part of that real Santa Maria flavor.

Plus cooking with the fat cap down, it will slowly wick up into the meat. Low and slow. You can, will remove the fat after it has cooked and rested, and before slicing it up to serve.

you can take that trim and make tallow out of it for many uses. I always save my beef trim in a freezer bag for later. Check out Harry Soo for his recent tallow tests.

Looks great. I just got a Gabby for Santa Maria cooking. I've smoked over 500 on a smoker, which turn out killer- especially with a short pink butcher paper wrap near the end (gives it a little more moisture) then I go for a quick reverse sear. I'm experimenting now with the Santa Maria set-up and appriciate your insight bro.
