For the short rib:
2 liters of water
100 grams of curing salt
2 pieces of short rib
3 leaves of bay leaf
200 grams of jus de veau
For the pommes fondant:
4 pieces of potato
200 grams of jus de veau
3 springs of thyme
For the shallot creme:
6 pieces of shallot
30 grams of sherry vinegar
100 grams of jus de veau
