Today I am cooking a delicious Uzbek soup Shurpa (Shirva) on firewood. This is the simplest recipe for cooking Shurpa at home.

Ingredients for 12-14 people:
- meat 1.2 kg (lamb with bone or beef);
- potatoes 2 kg;
- carrots 3 pieces;
- onion 3 pieces;
- lamb fat tail 150 g;
- Bulgarian pepper 3 pieces;
- tomatoes 3 pieces;
- garlic 1 head;
- coriander 100 g;
- salt;
- pepper;
- water 6 l.
This is a fairly simple recipe for Shurpa, but its preparation takes about 4 hours of time.
After roasting the fat tail and meat, a little salt and pepper are added, water is poured and the foam is removed. My water came to a boil in about 40 minutes. Then I added the onion and salt. Next, the soup is cooked over low heat for about 3 hours. All this time, it should preferably be covered with a lid so that the water does not boil out. From the moment the water boils, we will add the ingredients to the soup every 45 minutes. First add the carrots and garlic, then the bell peppers, tomatoes and coriander, and then the potatoes. After adding the potatoes, check the soup for salt.
