The use of a pasta machine isn't very authentic. I have made pasta like this with a roller. Apparently Mindy has some arthritis issues. (I avoid using machines all the time.)

Mandy, thank you for another great noodle recipe! I love mian noodles, but they are hard to find. You’ve taught me how to make noodles and even dumpling skins that I thought were too hard to make on my own. The best part is that you showed the detailed, step-by-step process to make them in a stand mixer. I’ve come to rely on my mixer more and more because I have nerve damage in my wrists and elbows due to decades of abuse as a wheelchair user. One tip I may be able to pass on to other seated or short folks is a clear Pyrex mixing bowl is extremely helpful. I can see the state of the dough from the sides of the bowl and that means I don’t have to stop the kneading process constantly to check the water to flour ratio. Just make sure it’s the right bowl for your mixer model. Thanks again!

I like these ones Mandy because you don't have to cook much. You only need to cook the noodles and it's ready, then just mix through the seasonings! Very easy!

At the time of this comment, your in-video links didn’t show up. But this is sooooooooo delicious looking. So much so, I just bought a pasta roller for my Kitchen aid so I can make the noodle like you. I too have arthritis and carpal tunnel issues in my left hand and haven’t been able to make udon for a few years now.

Thank you for the informative video. I always seem to learn something new when I watch them. Incidentally I am Italian and enjoy making my own pasta. I also use a KitchenAid machine to knead the dough and roll it out because it takes less time and the end result is the same. By the way there is no link in the video to the seasoned soy sauce but I did track it down to your flaming noodles video since I intend to make it.

Mandy's noodles are all you need for a super yummy meal. These are like amped up 'sesame noodles.' When I go to eat Chinese, I like just ordering sesame noodles. Maybe scallion pancakes. Never understood multiple courses and especially this reality of a 'banquet.' I would rather fake an illness and eat Chef Boyardee at home, than an 8 course meal. You could eat these noodles every day. I find the taste, which is kinda like peanut butter and spicy oil, does not get old.

Chinese sesame paste tastes very different since the seeds are unhulled and toasted and in tahini they're hulled and raw. I would recommend using peanut butter with a very small amount of tahini mixed in to get the closest substitute.

I want to be honest that home made is not always better. Some of us have zero talent for cooking. I like to cook, and it is mostly edible, but no one is going to label me "great cook". I can make many foods pretty good, but anything that requires more than a 1/4 cup of flour is not going to work for me. I am not joking, I am sad about it. I love you, but I will never be able to make home made noodles anyone would want to touch, let alone eat. Other people have other flaws. Some of us will never be great cooks, but we do what we can to be better than we were yesterday. Thank you for teaching us many things that make our food better, even if we can never match you.

I freeze my homemade noodles. They will keep for a couple of months at 0F ( -18C). If I have extra cooked noodles, I toss them with a little oil and refrigerate them. They should be used within 2 to 3 days.

Tahini is untoasted sesame seeds. The Chinese version is toasted sesame. You could substitute but the flavour will be significantly different

Yes. Easy to make your own if you can't find it. Lightly toast white sesame seeds til golden. Cool. Blend to a paste with oil. Also makes a great spread with added spices and sweet hot paprika.

@@jennifergiamblanco2942 Tahini is from both untoasted and toasted, depending on the flavour you're looking for. Asian sesame paste/butter also has both versions. I personally prefer toasted for deeper flavours.

imo, japanese "memmi" is pretty close to the "sweet soy sauce" you use, it's just missing some of the spice

Another way to knead such a dry dough is with your feet, Japanese style. There are a few videos here on KZbin that demonstrate the method very well.

Hello, every time you mention your arthritis, i feel VERY sorry for you. I have contemplated many times to tell you, that your arthritis is most likely triggered by the things you eat. Why dont you try to stop eating everything, that contains gluten, preferably all carbohydrates and other known allergens such as peanuts, soy products, dairy and see, if your health condition improves. That also means, tha every time you eat these lovely high gluten home made noodles, you make your health problem worse, becuse it triggers inflamation in your body. You probably will not listen to this advice and you didnt ask for my smart ass comment, just think about it next time you are in pain again. There is a solution to it. Otherwise, keep up the hard work, I love your recipes.

Arthritis?!? You're too young. I know your livelihood is Asian food; however, it might interest you that low carbohydrate is associated with reversing arthritis. It did this for me. By the way, I love your recipes, and I make them very low carb so I can enjoy your great flavours! Be well! ❤️
