Thanks, I never knew mayo was so easy to make, looking forward to trying it. I live in Kenya and pay 3 to 4 times that per gram for a jar of the slightly weird tasting shelf stable stuff that the local supermarket stocks.

If you don't have a hand mixer or is like mine that refuses to make mayo (??), you can whisk it by hand and it doesn't take that much longer. However, make a small amount because homemade isn't shelf stable so only lasts a few days.

Good timing this video. Ive been making coleslaw, but with budget tesco mayonnaise. My biggest problem was justifying buying a whole cabbage. But i solved the problem by chopping it all up and blanching it then freeze it. i can now make small amounts of coleslaw as and when i want it. i now also use the cabbage in stir frys and stews.

You could make a nice potato salad with this, some small boiled potatoes and a few chives 👨‍🍳😙👌 I quite like a Waldorf salad with celery, walnuts and apple (and/or sultanas) in mayonnaise, although it’s a tad more expensive with the walnuts. Adding a bit of Apple to the coleslaw might give it an interesting taste. It’s just got me thinking about Coronation chicken as well - bit of curry powder, sultanas or diced apricots and flaked almonds might be a nice combination as well. I guess you could do that without the chicken too and have a Coronation coleslaw, that would be quite an interesting experiment to try out… Maybe a Coronation potato salad? 🤔💭👨‍🍳

You could try cutting the oil by 25% for a low fat mayo. My experience is, fat is not as important to weight loss as cutting carbs especially wheat, corn, and other grains. A little olive oil in an otherwise low fat diet won't hurt you.

Raw egg so don't make too much. 4 days is my limit on everything. YMMV.

Great to see that thinking about the cost per serving or per meal dish is become part of home cooking. Although I have thought about the cost of the meals I prepare for my room mate and myself that has become increasingly necessary given my pensioner's fixed income and the ever increasing cost of food.

In the supermarkets you pay about £1 or more for 100g of coleslaw so it's definitely cheaper than store bought.

I like a drier coleslaw. I use a pound (450 g) of cabbage for that much mayo and add about a quarter teaspoon of caraway seed. If the cabbage is a little bitter, I add a tablespoon of sugar to cut the bitterness.
