INGREDIENTS
2 lbs chicken breast (butterfly and pound evenly)
1 tsp salt
1 tsp granulated onion powder
1 tsp granulated garlic powder
1 tsp Italian herb blend
1/2 tsp cracked black pepper
3 Tbsp unsalted butter
2 Tbsp cooking oil
1/4 cup onion (fine dice)
3 cloves garlic (chopped or minced)
1/4 tsp to 1/2 tsp crushed red pepper flakes
1 cup low-sodium chicken broth or stock
1 to 1 1/2 cups heavy whipping cream
1/3 cup grated parmesan cheese
4 oz sun-dried tomatoes
5 to 6 large fresh basil leaves
salt to taste
DREDGE
1/2 cup all-purpose flour
1 tsp granulated onion powder
1 tsp granulated garlic powder
1/2 tsp salt
1/2 tsp cracked black pepper

I made this tonight and it was quite a HIT with my son and husband! I LOVE sun dried tomatoes, so when I saw this recipe, I had to make it. I forgot to buy heavy cream so I used the only thing I had: skim milk - I added extra Parmesan cheese to compensate. Also, I substituted cilantro for basil. DELICIOUS! Thank you, Angelica! A little helpful. Hint when using butter wait for the large bubbles to dissipate. That's the moisture in the butter you'll get a better sear

This looks so good. I've been cooking more in my electric skillet, among other electric appliances I own. I believe this recipe is made for electric skillets as a one pot meal. I love those because with a salad and/or some buttered broccoli or green beans, you can have a satisfying meal. I'm trying to get used to a lower carb way of life and this meal is perfect!
