I promise this will taste better if you don’t shut the pan off before adding all the dry spices. Butter separating isn’t about the time , it’s about the temp. Keep it low and slow and let those spices warm up and cook off a bit . Then add the garlic, then shut off the heat. Better method I promise😇

I can easily imagine that butter stirred into hot rice, or maybe poured onto hot egg noodles. I have to eat corn off the cob, but I'd most certainly be adding corn to the dish, no matter what it would be. I'm going to be making the butter this week, and can hardly wait!

When we were kids in Brooklyn my mom would occasionally serve us what she called Cowboy Sandwiches. Buttered white bread with Campbells Pork and Beans on top- open sandwich style. We believed it was authentic- mom would not lie….

I think corn is to the vegetable world as lobster is to seafood! There is nothing better than fresh corn, especially with the tips cut off, the milk scraped into a skillet with butter, salt and pepper and cooked down!

@@lindahandley5267That’s an old recipe that’s been passed on from hundreds of years. I learned how to cook it exactly like she did. It’s the best tasting corn ever! Kinda like skillet fried and smothered corn. And yes, getting all the milk out the corn and cob. Turns out perfect every time!

That does look good. I've been making herbed butters since I was a teenager and learned cooking. I grew up in a family of gardeners, lots of items at my fingertips. When I make my combinations, I do NOT melt butter. There is no need and you risk separating it. Soft, room temp butter mixes just fine with spices and herbs.

I agree but you want to add some heat to the garlic to cook it a little since raw garlic in this recipe doesn't seem like it would be a good fit. I make it this way and then let it solidify in a small dish so it's soft but not melty.

Sweet corn is best grilled inside the shucks, just pull back the shucks on the very tip to check for critters, pull the shucks back into place and lay the ears on the grill. Turn so each side gets equal time on the heat. The outer layers will burn and hopefully the kernels will get a bit of brown. Peel the shucks back to form a handle for eating cowboy style, a quick wipe to remove the silks, and the corn is ready for the application of butter, salt, and cheese. Not using the grill? Pop the corn, shucks and all into the microwave. You won't get the added flavor of brown kernels but you will still have much more flavorful corn than boiling.

Ohh, if only my oven and stove were fixed. -- Hmm, but I wonder if I could make it work in a microwave or crock pot. That sauce sounds good! (I've never tried tahin (tajin?) but have seen it in two things now. Lime tahin, huh? I could definitely see this for a sauce for fish or other seafood. -- Have you ever made a recipe for tortilla-crusted fish? There's a frozen dinner (Healthy Choice) for this that I like, but I've never tried to reverse-engineer the rice, veggies, and sauce that goes with the fish and crumbled /grated tortilla topping. I could imagine this cowboy butter sauce used for something like that. And street corn, oh, cool.

This looks delicious. I’d have to find an alternative to the Dijon mustard though. Most mustard recipes call for turmeric and I’m highly allergic to it.

I'd just look for mustard seeds and grind them up fresh and put them in. That would provide a pretty close flavor, maybe a tiny splash of white wine vinegar.

The best corn has thin skin, sweet & a lite yellow color almost white. Boil water, drop in corn for less then 5 minutes. Natural sweet corn flavor!

Not gon lie that cowboy butter sauce made my stomach say Yahhhhhoooo GIT in my belly! All of it really, but I have a special affinity for anything that includes corn 🌽 it’s my fave, ESPECIALLY W/Cotija cheese! Thx. Have you ever tried cowboy crack it’s like a brine Liquid that you can put jalapeños and corn and it’s so yummy with pickles and asparagus!! The pepper and corn are muey bien on pizza, with cheese and crackers. I’m so glad I found your channel, I like your voice it’s not irritating to listen too, I know that sounds mean but sometimes I have to put it on subtitles because people are yelling and I have my earbuds in and I just I don’t know where they have like a really grading voice with a vocal skry I can’t describe, but they have good recipes, so I want to watch it. Lol I’m not perfect either so I’m not trying to sound like I’m all bad or anything. Street corn is one of favorites here in CA. What a coincidence I bought an entire pack of corn on the cob. I was anticipating on making the regular street corn recipe. This one is a winner and new to me it's a must try. I have a large container of Tajin that will come in handy for this recipe. I intend to make some of your recipe and the other ears will be the original street corn recipe. Thanks for sharing this savory topping.

Microwave corn in the husk for 2-3 min and it comes out perfect. Husk and silk comes off really easy, too

Delicious! I tried it first on roasted corn -- have to say the Tajin was a bit too far forward for me, not bad at all, just a little too much for corn -- I might use half that. Looking forward to trying it fiull strength on BBQ beef, a tater, maybe popcorn -- that will be FOINE!.

Adding salt to the water for cooking corn, only makes it tough. If anything, add a little sugar for sweetness. Only salt when eating/serving

Guerrero street corn, not sweet corn, typical white corn, or corn that is grown in HI, maynoaise and tajin with fresh squeezed lemon and cotija cheese.

You didn’t coat the whole cob, only in middle so you gonna get to sides and will be lacking. Don’t tout delicious then skimp on the butter coverage. Smh

America's test kitchen suggested that after adding the corn to the boiling water, switch off the power. Let the corn sit in the hot water for up to 30 minutes. Something to do with the starch and pectin.

I know that you have to film and edit all these videos which I appreciate. Not complaining at all .... As a planner - I would start the chicken, then the rice, while those are cooking / resting make the Cowboy better and corn. Everything is done at the same time.
