I used saffron.raisins add some sweetness. One time I used dried cranberries. It worked. My mom added sweet peas. You can add olives in lieu of fish sauce. 👌👌👌👌

I have the same ingredients minus the tomato paste and instead of maggi stock I used coconut milk, slow cooked for 15-20 mins then baked for 30-45 mins. It's what I learned from my tito in Pampanga. But I want to try this version of chef tatung, slow cook lang and no need to bake❤

Traditional good ng ilongga yan ,lalo malapit na ang november 1 hinde yan nawawala sa amin kasama biko .. traditional na pag luto po niyan wala po tomato sauce , just normal na kulay yellow, sahog lang namin manok or baboy ,atay ,kunting hipon ,greenpease , mag iiba kasi ang lasa pag may iba kapa ilagay kasi pinalalabas mo po ang aroma ng malagkit at sahog kaya siya tinawag na Valenciana ..♥️

Very true pwede yan ang base recipe mo if you add a different ingredient nagtransform sya into a different recipe. Minsan lang ako nakakatikim nyan tuqing espesyal na okasyon lang. Masarap yan lagyan ng spanish sausage or fried pork or chicken 😊😊😊😊

Samin po meron balunbalunan, tahong, hipon saka atay ng baboy. Halos parang paella na yung samin sa iloilo pero arroz valenciana pa din ang tawag.

The Ilongo version uses coconut milk, and no Maggi and tomato paste. The turmeric will give the necessary color. The Spaniards use saffron. The recipe is Middle Eastern, introduced to Spain almost 1000 years ago, probably through Morocco. It was originally saffron from Morocco. Turmeric is the new, cheap ingredient. It gives the Valenciana a different taste and smell too. If you like turmeric, go for it. Saffron, Carmencita brand, is available in Ayala Mall groceries. It gives Valenciana the orange color and taste that we know and love. Valenciaba is a complete meal, so it should be enjoyed by itself. The rice liquid proportion is 1 is to 1. My mother soaks the rice overnight, drains the rice in a sieve before cooking for an hour. It can be steamed. Saute the ingedients and add the rice. Once the liquid had evaporated and tutong starts to form at the bottom of the pan, take the pan off the fire. Transfer the mixture to a steamer lined with banana leaves. Steam for 2 hours for a well cooked Valenciana. Check the water level always and add water. If you have no steamer for the purpose, use a wire sieve lined with banana leaves. Find a pot that fits the sieve, then steam it. Be sure the sieve is suspended, so that no water will touch the rice or it will be tacky.

No ilongo doesn't add coconut milk, that's pampagenios(bringhe) sorry I'm ilongo and both of my parents are also ilongo.

Ano po pinagkaiba sa bringhe? Ganyan din po yung arroz ala valenciana namin sa bahay pero may nagcorrect sa akin dati na yung valenciana daw po ay tomato based at turmeric based ang bringhe kaya ngayon po nalilito ako. Salamat po sa sasagot! 🙇‍♀️

Ok Bringhe Pampanga's original version Manok, atay ng manok, balunbalunan itlog ng pugo, chorizo (optional) Tumeric powder, luyang dilaw, coconut milk, green peas Bell pepper, garlic, onion, bay leaves, patis salt and pepper GLUTINOUS RICE Arroz Valenciana is tomato paste vase Half n Half glutinous ang ordinary rice like (Sinandomeng) wag LAON pork, chicken and atay mince pork (optional) halos the same ingredients minus quail egg and balunbalunan pati ang coconut milk, pro itlog ng manok ang i garnish
