Who knew a cucumber salad video would make me cry! My father (may he rest in peace) used to make this salad especially for me. Delis also used to offer German/Jewish "Gesundheit" (health) salad. It was a mixture of sliced summer vegetables (cabbage, bell peppers, celery, radishes, carrots, cucumbers, onion) that was dressed with a dressing of vinegar, oil, sugar, salt, and garlic powder; and then packed into a big jar or a crock. Each of the peoples of central and eastern Europe (Germans, Poles, Hungarians, Russians) have their own variation of this salad.

Hey Jim! I find that taking a 1 gallon zip lock bag and putting everyhthing in it to marinade, and squeezing the air out before closing it works better than the baking dish overnight in the fridge. It also puts everything in contact with the marinade and takes up less space inside your fridge. This is also easier to transport in a cooler to the beach or a pic nic. Good stuff.😋

Sometimes we incorporate a small dose of pickling spices or some of the ingredients typically found in pickling spice. Like you, the Ball and Chain and I are 60+, and the Boy's 30+ years old. 😊

Greetings from Spain. I learned a similar recipe from an Ukrainian here. One trick is to soak the whole cucumbers in water overnight, in the fridge. It is so to get crispy cucumber slices rather than soft.

Hey Jim. When I make cucumber salad (or other marinated dishes) I just put everything in a zipped food storage bag. I flip it back and forth to coat everything and turn it once or twice during its resting time. ❤️😎 Definitely going to try your recipe.

Amazing that so many cultures have a variation of this recipe. In Denmark we call it agurkeslat, typically doesn't have onion and uses a lot more sugar. But I tried this version yesterday, and I really liked it. Normally I don't care for uncooked onion, but the pickling process makes it very enjoyable.

I salt the onions and cucumbers while in a strainer for an hour to release excess moisture. Mix 'em all in a plastic zip lock, And sometimes 1/2 tsp celery salt. Serve in a bowl, not a dish. Sweet and sour freezing cucumbers, we call them.

German here - that's just the way my mom used to make it, just with way less sugar. But apart from that, cucumber, onions, vinegar, salt and pepper. Great as a side to stewed dishes like Rouladen, the tartness cutting through the rich sauce.

I agree on the less sugar. I don't remember it ever being so sweet. I guess back in the late sixties, early seventies, they were not as crazy with the sugar. People were a lot thinner back then, This could be part of the reason.

Love this! For years, I’ve been making cucumber salad for my mother, trying to approximate the way her German grandmother made it 70+ years ago. Your video immediately showed me what I’ve been missing. (I’ve been using only a spoonful of sugar and slicing the cucumbers way too thick.) I’m from the South, and in the summertime, we always had big jars of sliced cucumbers and Vidalia sweet onions in the fridge. The ‘dressing/marinade’ was vinegar, sugar (not nearly as much as you used though), black pepper, salt and water. This was a constant during the Summer, and always my favorite.

My mom used to make this a lot through the summers with our home grown cucumbers. It's addictive. She made another cucumber salad with sour cream and onion......salt and pepper. I think that was all, all I know is it was delicious!

Slice the cucumbers like you did, add them to a jar sterilized with boiling water & emptied, make a mix of vinegar & sugar, 1:1, cold, just keep mixing, it will dissolve... Add salt & pepper to taste, and pour over the jars, lock them up & keep them for at least 2 days in the fridge before tasting... Holds for a very, very long time :)

@@OceanFrontVilla3 Hey Snowbird... Not really, as the water from the cucumbers dilute the solution, so the next batch won't taste as strong as the first one. Also, with the added water, you'll be in risk of microbacterial growths in later batches. So, start fresh every time you make it :) Doesn't take long, ingredients are cheap, and it lasts a pretty long time (at least 3 months) Have fun & enjoy :)

@@marioncrocker1208 You sterilize the jar with boiling water, then empty it. Equal parts vinegar & sugar, cold, stirred together, until it dissolves. Salt & pepper to taste added. Not much. Add the vinegar/sugar mix over your thinly cut slices of cucumber in the jar, seal it & leave it in the fridge for at least a couple of days. I hope this helps, otherwise feel free to ask. I take a few strips of skin off then thinly slice the cucumber. thinly sliced sweet onion and the dressing is a lot of kosher salt, pepper sunflower oil and red wine vinegar with the oil going on first then mixed then the vinegar. No sugar no dill and the salad is delicious. Its always in great demand. I only add dill to a cucumber sour cream salad

This reminds me of a dish my dad made in the summer when his garden was full of cucumbers. He filled a large mason jar with sliced cucumbers and onions which he then covered with a mixture of equal parts sugar and white vinegar till the liquid covered the veggies. Lots of black pepper and a little salt. As the level of veggies decreased he would just add more cucumbers and onions till he felt it was time to start a new batch. He called it “pickled cucumbers” because they weren’t pickles exactly. It’s was delicious.

Other way - v thin slices of cucumber, salt a lot, then press all with a fork - put aside for an hour and the water comes out, pour out (the excessive salt will also pour out). The rest is the basically the same but but add sour cream (which replaces the water) . Yummy!

Yes, this is how my German Grandma made her cuke salad. She'd use a paring knife, while holding the cuke and got those slices THIN without a mandolin. :o)

alternative for better taste: add salt sugar vinegar to the cucumbers and mix. After 1 hour rest press between hands to let it loose some cucumber juice. You can add flavors like fresh dill or crushed minced garlic, but basically you are done. Same ingredients but as no water is added the flavors will be more concentrated.

I make this "quick pickle" cucumber salad which is similar: Cucumber Salad 1 cucumber 1/2 a small onion 1/8 to 1/4 cup sugar 1/4 cup red wine vinegar 1/4 to 1/2 teaspoon dried dill Peel cucumber and cut into thin slices. Peel onion and cut into thin slices and combine with cucumber. Bring to a boil the remaining ingredients and then pour over cucumber and onion. Chill.

For an Asian take on this, try the Japanese Sunomono salad. The key differences are squeezing out excess water after salting the super thinly cucs, the use of rice vinegar in place of white vinegar, and using something Asian like ginger root or sesame seeds in place of the dill.

Been making cucumber salad dinner I was a kid with cukes out of the garden. I love my mandolin now, but I used an old fashioned box grater for cucumbers for many decades. Works great for cukes on the slice side and no where near as scary to use.

I’ve been eating cucumber salad this way for 67 years. My grandmother, my mother and myself all make it this way. It never lasts very long in my house. I could probably make this 4 times a week. Thank you for the great video.🙂

My dad made sliced cukes with part water, part taragon vinegar, salt and pepper. Put in a bowling fridge and makes a great snack

I Use lemonjuice, white balsamvineger, canesugar, dillstems finely chopped mixed cold, cover, in fridge over night, adding the rest of the dill before serving. Pickled cold salmon, freshly cooked new potatoes and a Shrimp mayo with lots of more dill. Summer classic

I've made this three times since it was posted three weeks ago. My coleslaw used to be my most requested dish. Cuke salad has taken its place. I did scale back the vinegar a little to accommodate tender taste buds. 1 1/2 cubs vinegar to 1 1/2 cups water.

My grandmother used to pickle mini sized veggies all the time. She'd even use tiny onion bulbs, broccoli, cauliflower, little peppers, and one of my good friends used to make dill pickled green beans.

This is fabulous! When you poured the warm dressing over the cucumbers I was afraid they would become too soft. I see by the crunch of your famous and very handsome taste tester that they were crunchy. I make refrigerator pickles which are delish. I love cucumbers in that sweet vinegar with onion. My granny cheated. She used onion, cucumber, tomatoes and soaked it all in italian dressing. She said it had all the herbs, sugar, and vinegar you need.

I have a mandolin with a "holder" on it, so that your hand is shielded from the blade the entire time. And it gets all the way down to about 1/2" that doesn't get cut from being held by the holder. I love that thing. And in my family, the only kind of cucumber salad I've ever had uses mayo, sour cream and a much smaller amount of sugar. Plus instead of vinegar, a fairly small amount of pickle juice is used. Also substantially less onions, but adds some chives, parsley, dill and pepper.

Yes, I've always made my cucumber salad with good cider vinegar and sour cream, dill, shallots or chives, S&P to taste. A mandoline guard can be ordered separately, since many brands sell them as replacement parts.
