I worked in the fishing industry for years, we had around cutters on average who used filet knives that weigh about half an ounce, this man is using a sword and is just as fast, that's impressive

high carbon steel knives, "Old hickory" knives are probably my favorite. cheap, good quality and sharpen super easy, and stay that way. IMO they are worth probably double what they ask for them.

I don't really think it was fun when /he/ did it. Most likely the uncertainty and pressure of a community with few jobs available and the need to eat. It does look nice though, and learning to do it in an environment without those stressors must be very rewarding, I agree.

It's a wood tree log, easier for them to clean at the end of the day. It's not for the buyers', its easier for them. Those who buy it will have to rinse the meat with water, and then with crystallized salt and turmeric, before cooking it.

For all thoes saying that he didnt separate the bones of that tuna, He is Sri lankan and is speaking sinhala He asked the customer "කෑලි නෙ?" He asked whether he wanted it cut into pieces . Tuna cut like this is used to make tasty curries . And because we eat from our hand the bones are not that much of a problem.

I trained as a fishmonger and if that knife is even remotely as sharp as the ones I used one wrong move and thats gonna go straight though his finger like he was cutting a carrot. A good fishmongers knife can be so sharp you cut yourself and don't realize until you notice most the the blood on the cutting board isn't coming from the fish.

They get cleaned daily. 99.9% of bacteria placed on wood like this dies completely within a few minutes and once cleaned and left to dry overnight there is zero living bacteria left.
