Just a quick note to say that I made this today using the first recipe that Google suggested for smashed cucumber salad, which had you toss everything in a bowl. When the resulting salad was watery, I was like, 'hey, this would be much better if you salted the cucumber *before* adding the dressing' and sure enough, I found your recipe which does exactly that. I should have checked you first. 😄

Aww, this one hits me right in the feels. A lovely lady I used to work with who was Philippine used to always bring her 'famous' cucumbers to every potluck and they were devoured every time unless you got in line really early. This recipe looks so much like hers (except, possibly less fiery). Sadly, she contracted Guillain-Barré and is now in skilled nursing care so her wonderful cucumbers are just a memory. I will try this one of yours and think of her. Thank you, Chef John!

This is almost the same recipe my grandpa made for me in my kindergarten days (We're Chinese btw)! I learned from him and I must say, sesame oil is the most essential ingredient in this dish. Oh and normally I just eat this for dinner with a bit of rice and bok choy egg drop soup

I love this! It's one of my favorite cucumber recipes. I tend to serve it with my Nigerian beef stew. The contrasting flavors and textures work great together. Also, always with anything BBQ. You're a national treasure, Chef John. And life changing/enhancing!

Chef John I need to tell you about a thing I did, but I know you don't typically check comments on old videos, so I'll post it here. I live in an apartment and it's raining today. The double-whammy of not being able to grill things. I knew this was the perfect time to try your broiled chicken recipe. I also wanted mashed potatoes, but didn't really feel like boiling and mashing them, myself. Cue instant potatoes recipe. Here's where it gets crazy. When I plated up my food (next to some mediocre fried okra, but that's another story) and started cutting into the chicken, tons of juice leaked out and promptly started soaking into the potatoes. The resulting flavor was honestly incredible. In fact, it reminded me of your million dollar chicken video, with the chicken juice-soaked bread. It's not often that I get to try your recipes, but when I do I'm always blown away. Thank you for making amazing videos. I've really learned a lot from them.

I love this recipe!! So great for the summer with a bowl of noodles. I chop up some umeboshi into a sort of paste and mix that into the dressing. Then toss it all together. Love umeboshi and cucumber.

Hi Chef John, I love your recipes, this is the one I am most familiar with. It is probably one of the most popular dishes in China, so called 拍黄瓜... we use our heave knife to smash the cucumber, yeah, it is simple and incredible delicious. If you substitute the chilli flakes with some homemade chilli oil( chilli powder, chilli flakes, peanut chucks ), it will come out more flavoured

Tried out this recipe a few days ago and it was a big success. A great summer salad. I let it sit in the fridge for about 30 min before serving. We ate leftover salad 2 days later and it was still crunchy and even tastier!

This is same as 오이겉절이 “oh-ee gut-juh-ri” a korean side dish popular during summer. But we use more chili powder than shown here. And we don’t smash it like this. We just roll it a few times with our hands on a flat surface, applying gentle pressure like rolling out pastry dough, and then cut them into bite size cubes. 😁🥒🥒🥒🌶🌶🌶

It is called "oi-muchim" and she adds scallions, thinly sliced onions,along with the cucumbers,garlic, soy sauce,sesame oil and gochu-garu (Korean hot pepper flakes) and toasted sesame seeds. It is good as a side dish with grilled pork belly wraps! But I want to try Chef John's Ribs with it.

Vermillion 303 do you use sesame oil and Korean chili flake and sesame seeds in your recipe as well. Those are heavily Korean. It's called Korean cucumber salad for a reason.

They serve this in my local Chinese noodle and dumpling shop. It's very good with spicy soups.

Love the dish, great summer time flavors. One small tweak. With all the sugar and salt for the moisture removal, I found the end result a bit too salty. I rinsed the cukes in cold water after the brine (to wash off the the excess salt) then patted dry with paper towels and then put them back in the marinade. Perfect!

I made this with a few modifications since I can't have sugar. I followed all the steps except for the one where the salt and sugar needed to be added to the cucumbers after breaking them apart. I only used salt. Followed the recipe exactly as he stated in video after that and the taste was very sweet with just the seasoned rice vinegar. So I'm glad I didn't use sugar in the first step. Left the salad overnight and it's delicious. It remains crisp. Definitely refreshing. I'm pairing spicy fried chicken with this.

This is legitimately the best pickle recipe ever. My old Uni used to serve pickles like this.
