Guys I’ve been making my dad’s Italian sausage recipe for 40 years. It probably came over from Italy will his mother. I m here to tell you this looks great. I make lots of venison/pork sausage every year. I will be making this. I can’t tell you how great it looks. Please make more.

There’s a saying that “you don’t want to see how the sausage is made”, but this was great! It looks like you both enjoyed doing this project. It’s a bit of work, but if you have the equipment to make them and the desire, it’s well worth the time and effort. Looks like they came out great off of the LSG smoker. I bet they smelled even better than they looked. You both made it look so easy, moreover you had a good time making them. Thanks for sharing guys!

Great video showing the basics of making homemade sausage. This should be required viewing for people just starting out. Give them a 10 minute ice bath when you pull them out of the smoker and it will stop the cooking process and prevent wrinkling. My favorites to make are andouille and Texas Hot Guts.

A really good method for grinding is use the course grind plate first then put the fine grind plate in the second time through. I usually spice my meat after the first grind then with the second grind the sausage is mixed really good.

I have the sausage grinder and have not yet used it. I had a hard time finding casings because my daughter couldn't eat pork. Finally, I found casings online in stock. Will have to set a day aside to try.
