I brine vs. inject. My preference, either way, spatchcock is the way to go.

I don’t think that blanket would hold my 25# turkey, 😂😂

What was the point of adjusting the P setting if you just adjusted the temp to 375 anyways which is way higher than any P setting.
@GrillSergeantАй бұрын
You will get some temp swings BUT you will get more smoke in smoke mode even at higher temps.

Interesting. I have the Austin XL Onyx and when I adjust the P settings it adjusted the temp so when I crank it up to 375 it takes it out of the P settings. Maybe it's just my model.

in my experience cooking whole turkeys, chickens, cornish hens and ducks, if the meat on the end of the drumstick recedes that much, your breast meat is usually overcooked

Is it necessary to cut the spine out? Could you cook it with the spine if you can fit it in the vertical smoker?

I'm wondering the same thing.

You said to cook at 375° in video, but your written directions say 275.

That’s what I get for typing the description at 2am. 😂 Updated. Thanks for letting me know.

Be careful not to over inject it, meat will get mushy. Lesson learned the hard way
