That is actually a street food it’s Mexican corn they sell it in different areas I am from New York city they have it all over but I do live in Virginia and I haven’t seen it in the streets but you can purchase it from different restaurant

Add lemon zest to the mayo cotijo cheese mixture along with chili powder then lather on. Lemon zest is my secret weapon. Also if don’t have cotijo cheese or another alternative ? Use feta cheese. Taste just as good. Lil sliced jalepenos added to the mix is fire also. Keep the videos coming AB. Cheers

I made street corn the other night. I used ranch dressing instead of mayonnaise. The trick is you have to use the dry package butter milk ranch dressing mix. It's the butter milk that makes the difference for me. I don't like bottled ranch dressing. The corn was delicious.

The corn needs to be charred a bit. It needs lime (since Mexican mayo has lime) and mixed equal parts with Mexican Crema. The topping after the Cotije Cheese can be chipotle powder for its smoky flavor and spice or smoked paprika.

Boiling corn overcooks it! Don't Do It! Just bring your water to a hard boil, turn the heat off, drop your corn in and put a lid on it! Walk away and leave it for 15mins/2 ears, 20mins/4ears. It'll be the BEST corn on the cob you've ever wrapped your lips around....Guarannnteed (in my best Justin Wilson Voice)!!! 🤭

You can find elote vendors in Brooklyn NY. Usually mom and pop carts stationed on street corners in shopping arreas with heavy foot traffic. Also, aguas frescas.
