The crunch that hurt around the world well at least it Wisconsin AB id done it again that chicken look wonderful. You may laugh at me, but I am pretty much of a new cook and I’m still learning.
@brettmanley49448 ай бұрын
This is my go to recipe, but I adapted it a little. Hot sauce in the buttermilk, marinate at least 4 hours. In the flour dredge, I cut the salt and replace it with 2 TEASPOONS of Baking POWDER. Do Not Use Baking Soda! It will leave an unpleasant metallic taste. Use Baking Powder Turn it through the flour mix and let it rest for 15-20 then dredge it again before frying in 1/2 inch of Canola Oil. Crispy. Juicy. Yummy.

Im from Georgia and i was taught to soak chicken in buttermilk overnight. I use 50/50 flour and seasoned flour mix and add a little salt, pepper and paprika. I use a egg wash and sometimes double coat it depending on my mood. The way my granny taught me was sprinkle a little flour in your grease to check the temperature of it and the chicken floats when its done. Also I cook it in lard. . Never tried the dill pickle juice. I will have to check that out.

Growing up, my grandmother used the paper bag method and a large cast iron skillet. Never used buttermilk but I'm gonna try this. Still have the skillet from my Grandmother too. Great video. 👊
@brendafoster47123 жыл бұрын
I always use buttermilk and learned that from my grannie, God rest her soul❤️...it adds a whole different level of deliciousness to your fried chicken...I learned from my grannie...first soak in buttermilk for an hour or two or however long you want, then your spiced-up flour (I shake mine in a brown-paper bag), then an egg wash with a little cream/milk in it, and finally another shake or roll in the flour...makes for really really mouth-watering chicken! If you're going to make gravy for those mashed potatoes you're serving with that chicken, be sure to take anywhere from 3-5 tablespoons of your spiced-up flour and set it aside to make your gravy...be sure to do this before your first shaking of the chicken in flour right after the buttermilk soaking so that there is no raw chicken in the flour when you make your gravy...I always use milk to make my chicken gravy and you get this nice lucious thick white gravy with loads of little bits of chicken drippings (I think Emeril calls them the "yummies") that are left over in your skillet after you're done frying your chicken...be sure to dump out any excess grease, but leave a little for mixing that spiced-up flour with that you set aside to make the roux for your gravy...trust me, you won't be sorry because you're gonna be lovin' that fried chicken! I use a combination of olive oil and butter for frying my chicken and just enough for frying (in a cast-iron skillet)..no deep frying for my chicken unless I'm using my deep-fryer and then that's a whole different ball-game. Enjoy!
