This Broccoli Cheddar Soup is AMAZING! - This broccoli and cheddar soup is amazing! It's perfect for cold weather, and it's so easy to make. You won't believe how good it tastes, and it's sure to please.

Bread Bowl
1 Tbsp. Butter
1 medium Yellow Onion, finely chopped
1/4 cup salted Butter
1/4 cup All-Purpose Flour
2 cups Chicken Broth
2 cups Half and Half
12 oz fresh Broccoli, roughly chopped
2 Carrots, peeled and chopped
1/2 tsp Kosher Salt
1/4 tsp Paprika
1/4 tsp Garlic Powder
1/4 tsp Dry Mustard (can substitute with about 1/2 tsp regular mustard)
1/4 tsp Black Pepper
2 cups Cheddar Cheese

Made this earlier and just wanted to come back and say thank you. My family loved it. It turned out great. The only things I did differently was used heavy whipping cream (my grocery store was out of the small carton of half & half), 3 cups of chicken broth, doubled the salt, garlic, paprika, and added onion powder. Delicious.
