I tried Sucklebuster's Clucker Dust chicken rub and some new charcoal briquettes - Jealous Devil's Max XL. If you're as big of a fan of barbecued chicken as I am, you're going to love this combination!

Looks great, what I do is let it rest uncovered for crispier skin. If you have it even partially covered it will literally steam the skin as it rests.

Looks and sounds good Brent. From your initial taste, I suspect it's quite hot. Question, Do you wrap each piece of chicken wrapped in tin foil? We've never done it that way, but seems it would work well to stop flare ups, but also keep the chicken moist cooking in its own juices. TYFS 👍

Thanks Mark. I only wrap at the end, after it’s off the grill. I also cook offset from the briquettes so there is no flare up. The chicken stays moist because we’re melting (rendering) the intramuscular fat. Build the fire against a side, place the chicken on the other side, then put the lid on with the vent opposite the fire to get a convection effect. I want to hear your results!
