Just tried my first brew with a new Sophie. Used 20 g of Obadia Urruti estate, roasted for espresso, a medium roast. Followed the instructions. Delicious. Dialed down the acidity that I would get on my espresso machine, which was a good thing because it was too much. Flavourful brew, very smooth, very full body. So far very thrilledwith this brewer.

Got mine today and, I can straight away see the difference the design thinking has made. I brewed the recipe suggested simultaneously on both my existing filter (almost the exact same size) and the Sofi. Extraction was just under 6 minutes with the Sofi and there were air locks and stalling on my old filter. I ground espresso fine and used a medium dark roast. The filter coffee was very good; I might go one click finer next time and play around with this a bit. Shout out to the team for the simple but effective redesign on the classic South Indian filter (air vent is brilliant).

Mine just arrived…and it’s super…following directions I had great coffee from two different kinds of speciality coffee I had an around (one local roaster, one from Ritual). I sent one to a friend and it was delivered the today as well and we brewed together from 3000 miles apart. LOL. We both had an excellent first experience following the included directions.

My filter arrived last weekend. I have to admit, that I am impressed. Having to wait for it so long, gave me time to think about it. I figured, I could replicate the results with an Aeropress. And I was concerned about the missing of any paper filtration. Turns out I was wrong. I never got such a clean cup without paper filtration. And usually I don't like dairy in coffee products. But these dark, caramel and choclate notes are very nice. It is the perfect morning coffee shot. So much simpler than all the complicated fuzz with a V60. I use it a little different as you suggest in your video. I use a brew ratio 1/10 with 25 gramms of espresso fine ground coffee, medium roast ethiopian. 250g 96°C Water. The extraction is way better. With your suggested brew ratio 1/6 my brew hat a sour taste of underextraction. After a 50g pour I use WET-WDT for the bloom. The first complaint I have is the tight fit of the components. Although it is a very personal problem of mine. I have weak hands due to health issues. It is pretty difficult to get the filter off of the cup when it is that full and hot. But as a mechanic I might just widen the base slightly. And viewing the promotion video again, I'm sorry but I have to tell you, that you lied about "precision holes". The size of the holes in the filter are anything but precise. I cannot taste a bad influence though and the filtering is really really nice. I hardly got any coffee grounds in the cup, even with my very fine grind setting.

Hey there, thank you for buying SOFI and taking the time to leave a detailed comment. We always appreciate hearing from customers, and we're thrilled that you've had a good experience. One of the biggest reasons we became obsessed with this style of brewer is the clarity that it manages to achieve without any paper filter. It proves that self-filtration of the coffee bed does far more than any paper filter can. It just took us some time to figure out that we needed to reduce agitation significantly to achieve this level of clarity. And yes, careful pouring results in a cup with little to no sediment. This sediment also settles by the end of the brew, so if you pour the concentrate out carefully, you can leave this minimal sediment behind as well. A ratio of 1:10 works really well for slightly denser coffees, and we use this too. 1:6 is just a solid starting point that we found during our testing. As for the fit, you're absolutely right. It's something we're looking to improve in the future. The way the pieces fit together at room temperature changes when things are hot, and it's a tricky balance. Your feedback is noted, though and the handling is something that were looking at very seriously. Lastly, the "precision" holes. We can assure you that this is not deception and more a relative term when compared to the traditional South Indian filters available here. If you compare it to those, you would agree that SOFI has far more precise holes. Compared to precision espresso baskets, however, you are correct, this would not qualify as precision. It's also important to consider that the level of precision required for brewing at atmospheric pressure is much lower than for brewing at 9 bars of pressure. These holes are also punched as opposed to drilled and as you have noticed, there's been no negative impact in the cup. That being said, maybe we can find a better word for marketing purposes in the future. Thanks again for buying SOFI! It's a truly versatile brewer, and we hope you tinker and find new and exciting ways to make delicious coffee with it.

Just tried your recipe with my ₹50 brewer with ~30% of holes not properly punched and some holes clustered into triplets... Still, surprisingly good! Very intrigued to see how your version will enhance the brew.

The reason we made this one is because we realised how capable the original one is when using the right technique. SOFI just refines the overall experience with much better build quality, airflow vents to prevent stalling and better holes and coverage.

For owners of the original, would you recommend drilling holes? I had considered it and given the design of the new one, it looks like the move. Setting it up loose works, but it is a little fiddily to get it both loose and level. If so, I assume you tested different slot sizes to get the sufficient/optimal airflow, what size is the slot? I think if I drill a whole of the same area, my experience will be equilavent and compatible with any upcoming recipes. Am I on the right path? Thanks!

We’ve had other v1 customers who’ve done this. The slot on v2 is 1mm x 5mm which was just large enough to allow for pretty much unrestricted flow. So you could do may one 2mm hole but you do risk damaging it. The vibrations can cause vertical cracks. So while it would help with air flow we don’t necessarily recommend it.

So what's different than the sofi 72? I have that and i rarely use it now. Not that the brews were bad but it definitely isn't something for people with hand grinders. the rubber gasket to hold the thing kinda sucked and so did that wd tool

Huge upgrade on build quality (50% heavier), much higher quality materials, air flow vents to prevent stalling and much more modern looking.

It works well with the Kalita filters or you can cut out a Chemex filter to fit. You can use the bottom chamber as a stencil to get the sizing right. Just remember that you need to be pretty meticulous with the latter method and pour very gently or you risk lifting the paper filter and having the grounds go below.

I'm very intrigued by this brewer as I would like to have an option for a strong, condensed brew without the hassle of owning, operating and maintaining an espresso machine. Now, at the risk of being dense: how does the final result compare to the same recipe brewed on an Aeropress (sans the 'press', obviously)? I hope this does not come across as disrespectful; I do realise that this brewer is much more than just a shiny piece of equipment, but a manifestation of Indian coffee culture. I'm just asking from a pure "consumer perspective", if that's alright 🙏

You pretty much nailed it in your comment. This as close as you'll get to the strength of espresso without the hassle of dealing with a machine. It uses a unique combo of very finely ground coffee and slow percolation to yield a sweet, rich concentrate with a texture I can only describe as velvety. This can be used much like espresso. With and AP the paper stripes away some of the body and the quicker brews yield lower TDS. You can technically try and brew a similar concentrate without the plunger but it just isn't the same IMO. We done a lot of testing. :)

The bottom chamber can hold ~280ml. If you want a larger drink then you can pulse pour and use another carafe but you’ll need to figure out how to prop up the brewer.

Agree, I didn't read the description, but why not mention that in the video? The video just says "new and improved, modern design", implying you designed it. Plus, the video didn't not mention South Indian filter coffee. The video is the main content on this platform, description remains hidden unless someone clicks on it.

@@aniketn3 this is the second version of the product. Also anyone who wants to buy it will need to navigate to the product page to buy it where they will see the South Indian Filter mentioned. This is also just a promo and it’s meant to be intriguing and raise curiosity. We will be posting a full brew guide where we will mention the SIF. And lastly, while it’s subtle this is our own design. You won’t find another filter on the market with this form or with the air flow vents or with such precise holes. Hope that clarifies things.
