Wow! This whole wheat bread recipe was delicious. I made one with the food processor and one with the bread hook. The food processor did a better job in mixing the dough, but it was a mess to clean after. I think I will continue to use the bread hooks.
@seygra203 жыл бұрын
For those without a food processor, you could use a metal dough cutter. Use the cutter to cut the dough as you knead (repeat until the dough forms). It takes some time for the dough to form but you will get a soft whole wheat loaf when baked.

I usually make bagel dough in the food processor but it never occurred to me to do the same for other types of dough. Trying this tomorrow. Ok...it turned out soft and nice. Mine was paler. Will increase the temperature and I also used a glass pan. Thanks!

Listen! I've started using my food processor a few weeks ago to knead my bread flour after I had amazing results with my pizza dough. I mean, after all, why is there a dough button on the processor. It's the only way that I've been making my breads now.....from white to multigrain. And the heat of the processor warms up the dough which speeds up the rising process. Love it!
@eatahfood3 жыл бұрын
Heard about the pizza dough usage and definitely going to try that soon! My food processor only has 3 buttons: Pulse, Low & High haha
@laura.l-k3 жыл бұрын
@@eatahfood with those buttons I'd recommend short burst of mixing because the blade would spin much faster than if there was a blade option. Mix away! But not too much! Lol
@dylanhism78332 жыл бұрын
Hey all another tip for you, mix the whole wheat flour with the water in your recipe, mix to combine, place it in a bowl and cover in your fridge with plastic wrap overnight. This softens the tough/sharp edges of the whole grains which can help the rising process easier later on. Just take it out of the fridge an hour before adding your yeast and continuing the recipe so that it's at room temperature. Bonus points if you use milk or part milk, part water as I find it adds a nice flavor to the flour and makes it a bit softer 👍

The Czech say dont knead kolaches too long because they come out tough. But bread improver sometimes contains gluten. Which got me thinking. The only time I made dough good is with an industrial bread mixer and a big dough hook and kneading it that long didnt make it tough. It's got to be them kneading by hand and doing too many flour dusts while kneading. So I tried this recipe and added the vegetable shortening once I formed my dough and just kneaded it like crazy folding it like a croissant and Never needing dusting. And now I hope for nice fluffy soft bread. If its the other way and more dense its still good tho. Its just a rustic bread good for soups. This bread is good for sandwiches and learning to make it soft and light is good for pastries, croissants, dinner rolls etc.. I must unlock its secrets.
