Listen Ria!! After over 20 years of toiling and trying in the kitchen, the art of making roti has evaded me!!! Only up until now!! I've never been able to figure out what I was doing wrong! My roti always came out hard and never swelled even though I kept following various recipes to a T. Thanks for letting me know that I shouldn't fold the dough! I use the same recipe but I fold over the dough and it does become stiff once cooled. Cant wait to try this method. Thanks Update: I made it using this method, and I couldn't believe the difference in texture. Now I can eat my roti even when it gets cold.

Love your tutorials, they are all more authentic than most and comes from practical experience. Finally tried your method this afternoon, my roti is no longer considered an anchor thanks to your tips. Used a glass top stove and an old frying pan as i couldnt find the tawa. Roti was able to swell and came out tender.

I make sada roti about 5 times and my family loves it. The kind of flower i use is roti mix and the butter i use is ghee and it came out soft, flaky and buttery. I am very happy that i make them. I commented some time back and promised to give feedback on this unique method. I have been using it each time.SUCCESS FINALLY! I even started using less baking powder and it still works. It rises each time and is soft. This method is really the most effective for me...and I have tried several. For those who have struggled like me..TRY THIS!! Hi Ria. Thanks for the sada roti making tutotial. Did it another way for over 50 years. Time to make a change. No more folding over. I will try squeezing and caressing the dough instead of folding...as that is for bread making. My grandparents also left India during indentureship. I am Trini and i love roti.

I have been trying to make sada roti for a couple weeks now( its the best type of roti to eat with pumpkin, carailli, potato, bodi and just about any vegetable you prefer in my opinion- not to mention no oil!). Each time it came out stiff and wouldn't swell. Today I just made a batch for my family and was soooo disappointed. watched loads of videos each saying I should knead well to develop the gluten. I am literally going to toss what I made ( i.e.give to my pitbull with his favourite beef stew- it should give him something to chew on) and try this method right now. I will give a feedback for those who struggled like me. Thanks Ria for showing your knowledge and experience in this charming video. Keep up the great work!

Ria!!! OMG! I made roti!!! I've been trying to get this right for a couple of years (like everyone else here :-)) with only limited success. Truth be told, I didn't even know roti was supposed to swell like that!!! Anyway, I cut the recipe in half so I wouldn't waste 4 cups of flour in case I screwed up. Lucky I did that. The first dough was too wet so I just chucked it and started over (with the 2 cups of flour I saved). I got the dough close to right, rested it, rolled it and slapped it in the pan. You can not imagine my delight when the roti swelled - and I mean fully. I've never been this giddy about something you do in the kitchen alone and fully clothed. Thank you so much for teaching me how to do this. I will probably have it with nearly every meal from now on. Thank you, thank you, thank you.

I tried over the years to make roti but never got it right. After seeing this video and noticing your technique in kneading the flour I realized that I had gotten it wrong. I always folded the dough many times which cause the roti to come out very hard. I tried this way and it was very soft and stayed soft until finished the next day. Thank you.

I followed your instructions about not folding but only using the knuckles and my Haitian husband showered me with hugs and kisses. Thank you ever so much for the verbal instructions about not folding. Now I understand why mine kept coming out hard. I actually used Amaranth that I popped and ground into flour. They puffed up and were soft as a pillow. So delicious. Hugs for such a wonderful instructive video.

If you making plenty you can cover the loyahs with DAMP PAPER TOWEL OR CLOTH to prevent it from drying up. . Not wet.

Indeed, an excellent video! I'm in the same situation. Most of my sada roti swells (some like phoulorie, some halfway), but the next day my leftovers are stiff. And I do fold over my dough :(. Hi Ria. I've been wanting to make this type bread for 12 yrs after I was able to make many other types of bread. I finally decided to make this only a week ago. My first and second trial were successful. My bread puffed perfectly but they got dried very quickly. I am glad I found your tutorial soon enough and used your technique and they came out nicely and stay fluffy and moist much longer. THANK YOU SO MUCH.

Hi Ria , thank you sooooo much for this video. I never knew how to make sada roti the correct way. It always came out like flat roast bake. I looked at this video once and attempted it and it came out so good except for the swelling part. I am currently attempting it for the second time (after seeing this video) and after looking at the video again I realised where I went wrong, so I am certain that it will swell this time. This is the meaning of step by step. You are so generous for sharing all of your methods. This is my go to channel now! Thanks again. Much love!
