Is there a reason why all three can't be consumed? (2nd breakfasts & all that Hobbit stuff). Sometimes Sunday breakfasts lasted for hours anyway when I still had the old farmhouse. Would load up the sideboard & my friends would show they were good "trenchermen" & work their way through the dishes. Kedgeree, devilled kidneys on toast, full Scottish, Welsh rarebit, Bath chaps & crumpets, eggs Benedict & eggs Florentine, croque madame/monsieur, porridge, boiled eggs & soldiers... the list went on.

Brunch is absolutely unnecessary and stupid. If you go out for it, it costs more than a proper breakfast or lunch, without being as good. If you're cooking it at home, why not make a proper dinner and either an early lunch or a late breakfast instead? Is there ever an actual need for a half-breakfast-half-lunch menu?

Because of my son’s chickpea (and wheat, rye, and barley) allergies, my Gujarati American MIL has figured out how to do all of these traditional Indian dishes with mung dal flour instead of gram or chickpea. Both of my kids just love her pakoras.

Note: "kiełbasa" is not a specific type of sausage, it's just the direct translation of "sausage"! There are many, many different types of kiełbasa in Poland, most of them smoked, but not all. They come in different flavours, shapes and textures and are meant for different purposes. Kabanos is a type of kiełbasa, thin and dry and meant primarily as a snack, not for cooking. For a sandwich like this, you want a soft, fatty smoked kiełbasa like śląska (Silesian) or toruńska that are popular for barbecue. Śląska is often available in packets in larger supermarkets, but if you want more choice or a fresher product, find your nearest Polish shop with a deli counter - there are many in London and all over the country. If you're lucky they will have not only products from big manufacturers but also "swojskie", which is a word for homemade or small batch. Now about cooking: you want to not just warm it up, but let it brown a bit on the cut sides - let the fat inside melt a bit and the Maillard reaction work the yummy magic on the outside.

He is such an amazing teacher, explains everything so well, and with him, Ben, and James working together is too fun. I know ive said this before, probably several times, but i love watching chef Kush, in his element, in the kitchen. Hes just so assured and efficient. This guy was born to be a chef, and whats more hes displaying a great talent as a teacher too. His ability to balance flavours and textures is second to none, and he can also explain what and WHY hes doing what he does as well.All this on top of being, when circumstance requires, a chaos goblin of the highest order, makes him perfect viewing material😅

Guys, you don't need a commercial chamber vacuum machie to vacuum infuse your watermelon, Food Saver makes a set of three Vacuum Seal jars that will adequately do the job. (Is that an idea for a future gadget episode???) There are also various "obscure" manual vacuum pump devices that use standard glass jars, a pinhole in the lid, and a specialised piece of rubber tape that seals the hole under vacuum that can also be used in a similar way. Lastly, I believe that Food Saver also produces a series of "Jar Sealling attachments that can be used for small batch vacuum infusions using Mason Jars. Check it out! Vacuum sealing at home, including liquids is a very doable thing.

12:30 Slight correction: this most certainly isn't a kabanos. Kabanos is a thin (under 1cm) and long (often over 30cm long) and very dry. Typically pork, but beef, beef-pork mix and chicken versions are popular as well. The main point is that they are dried enough to be shelf-stable without refrigeration. The sausage being used looks to me like "kiełbasa śląska" (Silesian sausage), most other Polish sausages come in much longer links. The confusion might have happened because there is a company called "Kabanos" that makes (among many other very good sausages and cold cuts) kiełbasa śląska.

The watermelon at the end you could approximate with a standard home "vac-bag" machine at home. Go through the "compressed" fruit process & it should come out pretty near, you may have to do it a couple of times though. 🍉

Me and my ex once made hollandaise, and it worked splendidly. I was so proud, lol, because I'd heard it could be super fussy. Also laughing at Kush describing lovely, sweet white onions. Apparently whenever I get onions, no matter the type, they are the most INTENSE, onion-y onions that ever were. They could be advertised as incredibly delicious and sweet, and if I bought them, they'll have you crying for a week. Good thing I really love onions!

@@Getpojke Yes, placek po węgiersku is a single big placek ziemniaczany with goulash. Latkes are closely related but not exactly the same thing. "Ciasto" means cake, a completely different thing 😁
