Pro tip: When freezing veggie broth, measure it out before pouring it into the tray. Once it's frozen take the cubes and put them in a plastic bag, labeling the bag with how much it contains. That will save you having to measure it all out in future. If you have for example, two cups and that turned out to be 16 cubes, and your recipe calls for half a cup of stock, you can easily figure out that you need four cubes, and that leaves you with 12 cubes, or a cup and a half of frozen stock left. It couldn't be any easier.

I use empty beer cans that I cut the top off of. one cup of broth per can.. freeze then put into freezer bags. I never use half a cup of broth..

I am making Ramen broth today, I will be doubling the recipe, eliminating the oil (I will sauté with water) Then when finished process it in my pressure canner into jars. This way it will keep longer and be available when ever I want it! It sounds SOOO good! Oh I will be eliminating the radish too......don't have one on hand and it's an hour to the store to get one.

or you can do what we do and make enough to make 6 to 7 litres at a time and then can them in a pressure canner. It makes them shelf stable for up to 4 years. we make veggie broth, mushroom broth, onion broth and a tomato broth. They are excellent as a base for all kinds of dishes and are super convenient to have on hand. just go to the basement, get one and pop the top. presto instant flavor instead of water.

Nice Recipies, very nice :O) When I cook my broth I leave everything to cool over night and strain the veggies out the next day, gives a lot more flavor because everything can soak in the water way longer. And I put a kitchentowel in the colanderr and squeeze the liquid out - you get more out of the veggies and it's easy because everyhting is cold.

Kombu is the base of Japanese soup stock, and the dish seems to be a unique fusion of Asian, perhaps Cantonese cuisine. It must be very good, but I can't imagine the taste till I cook this. You use a lot of Japanese ingredients, and I miss them! 😢

I did the veggie broth but after 1.5 hrs simmering the liquid reduced to like two cups only after squishing it out of the veggies. What did I do wrong? At least it got delicious at the end so great recipe anyway!

I sometimes use them blitzed to thicken a hearty winter stew. It's true that almost all of the nutrients and tastiness are gone, but the pureed veggies still have more nutrition and flavour than, say, potato or corn starch or white flour. But I only do this when I can use the puree on the same day. It's not worth keeping it for any length of time. Give it a try and see if you like it.

I went to a ramen place in Fort Worth, TX (really) called Hanabi, and they have a "tomato ramen" on the menu. It's either vegan or almost-vegan; certainly vegetarian. I think they make it by prepping broth like this, and then the cooked noodles, a bunch of cut up (raw) tomatoes, a small handfull of little pieces of broccoli, and that's it, all go in the bowl. Boiling hot stock goes over that, and is topped with green onion greens and served (prob. a little chili oil too). The broth is so hot it can't be eaten for a few minutes, which allows the tomatoes to soften up. It was insanely good. I think their broth was a little simpler, probably without mushrooms, and I doubt potato also. Oh and I don't think soy or kombu either. I'm going to attempt a simplified version of this broth because I'd eat that every day. Next time you're in Fort Worth for the annual Stock Show, take your cowboy friends for some tomato ramen at Hanabi, walking distance of the stock show venue. They'll love it.

I am not a vegetarian, even though veggies and grains are my favorites. I like your recipes. You don't try to make steak or chicken substitutes. You use ingredients that are usually in most kitchens or are affordable. And you make dishes to enhance all flavors.
