I didn’t use the garlic trick and I added one small step… I added a bunch of herbs to my oil before the onions and garlic and it made it super flavor packed. Even my picky family ate it

I do it slightly differently, cut it 1/4 inch and then fry out and put on simmer with lid on for sometime, stirring frequently.

Apparently, if you leave the root of the onion on, it doesn't release the vapour that makes your eyes water. Not sure about the garlic, he sliced into them and said that it makes it easier to take the skin off after they're cooked. Maybe he didn't want to burn the garlic

I’ve seen the technique of slicing the garlic and cooking it with the peel on before but never understood why you don’t just peel the garlic and cook it.

Because if you peel the garlic it will burn easily and the dish will taste bitter. This is done when one only want the flavor of the garlic and so avoid little peaces of it in your dish.

@@wsconsn me too, but they will burn quickly in a dish like this. If you try to avoid this by adding garlic at the end, the flavor is not infused through the whole dish. This method gives you developed garlic flavor throughout the oil and into the potatoes, without ruining the dish with bitter, burnt garlic.
